And since they come together quickly, you can make them on even your busiest of days. You can also make them ahead of time so you’ll always have a quick sweet treat waiting for you.

To create the creamy base for our bites, we combine cream cheese and butter. I always use full fat cream cheese and recommend it for these treats. For sweetness, we add both keto powdered sugar and keto brown sugar. I used the Swerve brand for both my sugars. This sugar contains zero calories and zero net carbs and is amazingly similar in its sweetness level to regular sugar. We add peppermint extract to give our bites the perfect mint flavor and then add just a pinch of salt. I added some green food coloring to my bites, but you can omit this ingredient if you’d like. I don’t mind occasionally using regular food coloring as the amount added is small, but you can also look for natural food coloring if you’d prefer. Keto chocolate chips give our bites awesome flavor and texture!
What kind of chocolate chips should I use to make these keto mint chocolate chip cheesecake bites?
You have a variety of options for the kind of chocolate chips you can use to make these cheesecake bites. I used Lily’s semi-sweet chocolate chips to make my bites. Alternately, you can use Lily’s dark, milk, or even white chocolate chips. One of my other favorite brands of keto chocolate chips is Bake Believe. They also make dark, milk, semi-sweet, and white chocolate chips. Don’t ask me how I know, but their milk chocolate chips make for an awesome sweet treat all on their own.😊I kept my chocolate chips whole, but you can chop yours if you’d like smaller pieces of chocolate. Another option would be to use a keto chocolate bar and chop it up. Lily’s makes quite a variety of candy bar flavors you could use to make these treats. I added ½ cup of chocolate chips, but you can add even more if you’d like.

These cheesecake bites are amazingly quick and easy to make, but there are a few things you can do to ensure yours will turn out perfectly! First, you’ll want to make sure you’re starting with both softened cream cheese and softened butter. This will allow you to beat them together until they’re smooth and without lumps. Then when you add the sugars, extract, and food coloring, you’ll want to beat again until everything is smooth and combined. You can scrape down the sides of the bowl with a spatula if needed. When you add your chocolate chips, you can use your mixer, or can just stir them in. Last, I use a cookie scoop to form my bites into fairly uniform sized bites. Alternately, you can use a spoon to make yours if you’d like. These bites can be served right away or can be refrigerated until ready to serve.

Ingredients
- 8 ounces cream cheese, softened
- ½ cup butter, softened
- ¾ cup powdered sugar substitute (Swerve)
- 2 tablespoons brown sugar substitute (Swerve)
- 1 teaspoon peppermint extract
- Pinch of salt
- Green food coloring, optional
- ½ cup keto semi-sweet chocolate chips
Instructions
1. In a large mixing bowl, add cream cheese and butter. Use an electric mixer and beat until combined and smooth.
2. Add powdered sugar, brown sugar, peppermint extract, salt, and green food coloring if using. Beat until combined and smooth.
3. Add chocolate chips and beat until just combined.
4. Use a cookie scoop to make equal sized bites and drop onto a parchment lined baking pan.
5. Refrigerate cheesecake bites until ready to serve.
