I’m always excited to share new recipes, but I’m crazy excited about these keto mushrooms in sour cream sauce. I’ve been eating them every day since I made them. I get out two or three mushrooms with some sauce, then take the rest to our extra refrigerator downstairs so I won’t be tempted to eat more! You can eat these as a side dish, as a quick snack, or as a topping for meats, vegetables, or egg dishes. I hope you will love these mushrooms as much as I do!

Mushrooms are a great food option when following a low carb keto plan. They are a low carb and low-calorie food and provide some important nutrients as well. One cup of mushrooms contains about 3 grams of carbs and 1 gram of fiber which equals only 2 net grams of carbs. Mushrooms also contain antioxidants, copper, folate, phosphorus, potassium, selenium, and vitamins B, C, and D. Mushrooms are also a good source of fiber. I used white mushrooms, also known as white button mushrooms, for this dish. You could also use cremini mushrooms. You’ll want to gently rinse and dry your mushrooms prior to using in this dish. I left the stems on my mushrooms, trimming only the outer edges.
What goes into the sauce for these keto mushrooms in sour cream sauce?
The sauce for our mushrooms is simple but incredibly delicious. We combine sour cream, heavy whipping cream, salt, and pepper to our mushrooms to create an awesomely delicious sauce. The combination of sour cream and heavy whipping cream gives this dish incredible creaminess. Our mushrooms and onions bring such amazing flavor and only need a little help to make the perfect mushroom dish! A little salt and pepper are the only seasonings needed for our sauce. We then add a little xanthan gum to thicken our sauce. You can omit this, but your sauce will be a bit thinner. We then top our mushroom mixture with some freshly grated Parmesan cheese and some paprika to give our dish amazing color and flavor.
How can I serve these keto mushrooms in sour cream sauce?
This dish can be served as an amazing side dish to complement any number of keto main dishes. It would work well with your favorite beef, chicken, pork, or seafood dishes. Serve these mushrooms with burgers, brats, sausages, or lettuce wraps to make for an incredibly delicious meal. This dish would also pair well with a nice juicy steak! ! You can also top your favorite cooked vegetables with some of these creamy mushrooms. I topped some scrambled eggs with these mushrooms and found the combination amazing! You could also make Palmini noodles, shirataki noodles, or cauliflower rice and top them with these mushrooms to make an incredible delicious and low carb meal. You could even serve these mushrooms as a fun appetizer!

Keto Mushrooms in Sour Cream Sauce
These keto mushrooms in sour cream sauce are decadently rich and amazingly delicious! This beautiful dish will make any meal extra special!
Ingredients
- 3 tablespoons butter
- 24 ounces mushrooms
- ¼ cup diced onions
- ¾ cup sour cream
- ½ cup heavy whipping cream
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 teaspoon xanthan gum
- 1 cup freshly grated Parmesan cheese
- ½ teaspoon paprika
Instructions
1. Pre-heat oven to 350 degrees.
2. In a large skillet, over medium high heat, melt butter.
3. Add mushrooms and onions. Saute for 10 minutes, stirring frequently. If onions brown too quickly, decrease heat to medium.
4. Add sour cream, heavy whipping cream, salt, and pepper to skillet. Stir to combine. Simmer on medium high heat for 5 minutes.
5. Sprinkle xanthan gum over mixture and stir to combine. Simmer for two additional minutes.
6. Pour mushroom mixture into an 11x7 inch baking dish. Sprinkle Parmesan cheese evenly over mixture. Sprinkle paprika evenly over cheese.
7. Bake for 20-25 minutes or until mushrooms are tender.
