Cauliflower is low in carbs, low in calories, and rich in nutrients. And although you’ll most commonly see white cauliflower, it can also be green, orange, and purple. You can use any color cauliflower to make this dish. I love raw and cooked cauliflower. Raw, it’s one of my favorite veggies to include when serving raw vegetables and dip. There are also a number of ways you can cook cauliflower. It can be boiled, grilled, microwaved, roasted, sauteed, or steamed. In addition, you can rice cauliflower and use it as a low carb substitution in any dishes calling for rice. Cauliflower can be served as a stand alone vegetable side, or it can be added to casseroles, mains, and soups.
What ingredients go into the sauce for this keto mustard horseradish whole cauliflower?
To make the sauce for our cauliflower, we combine just a few simple but amazingly flavorful ingredients. The creamy base for our sauce is mayonnaise. When buying mayonnaise, you’ll want to make sure there is no added sugar or other ingredients you don’t want. You can also use homemade keto mayonnaise. I used sharp cheddar cheese to make this dish, but any good melting cheese could be substituted. I do recommend buying a block of cheese and shredding it yourself, as it melts the absolute best. Adding both Dijon and yellow mustard gives this sauce amazing flavor. If you’d like to add an extra kick of spice, you could use some spicy brown mustard. I used regular prepared horseradish, but alternately you can use hot horseradish if you want more heat. It’s also quite easy to make homemade horseradish sauce! For seasoning, we simply add smoked paprika, salt, and pepper.
Instead of microwaving, can I make this keto mustard horseradish whole cauliflower in the oven?
Yes, you can! You will have the extra step of boiling your head of cauliflower first, but it’s still quick and easy to make. Here are the directions for this alternative method of cooking:
1. To a large stockpot, add enough water to cover head of cauliflower. Bring to a boil over high heat.
2. Add cauliflower, stem size down, to stockpot. Return to a boil. Cover and cook for 12-14 minutes, or until cauliflower is fork tender.
3. While cauliflower is cooking, pre-heat oven to 400 degrees. Line an 8×8 inch baking pan with parchment paper. Set aside.
4. In a small mixing bowl, combine remaining ingredients. Stir to combine.
5. Once cauliflower is fork tender, drain water and allow cauliflower to cool slightly. Pat dry. Coat cauliflower evenly with mayonnaise mixture.
6. Place into prepared baking pan. Bake 20 minutes, or until cauliflower is nicely browned.

- 1 medium head cauliflower
- ¼ cup water
- ½ cup keto mayonnaise
- ½ cup shredded cheddar cheese
- 1 tablespoon Dijon mustard
- 1 tablespoon prepared horseradish
- 1 tablespoon yellow mustard
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
1. Add cauliflower and water to a microwave safe dish. Cover with plastic wrap. Microwave for 8-10 minutes, or until cauliflower is just fork tender.
