This keto pepperoni pizza red cabbage skillet is a fun and amazingly delicious dish! This is comfort food at its finest!
Oh my, but this keto pepperoni pizza red cabbage skillet is so delicious! It’s one of my new favorite dishes! I had a head of red cabbage and wanted to make something unique and different from any cabbage dish I’d ever made. Hmmm…I also had a package of turkey pepperoni setting out on my island. The outcome was pepperoni pizza meets red cabbage, including a homemade low carb pizza sauce and, of course, cheese! I hope you and your family will enjoy this fun dish!
Let’s talk about our pepperoni and our fresh vegetables!
I chose to use turkey pepperoni for my skillet. I actually like turkey pepperoni more than regular pepperoni. Regular pepperoni is made from a combination of beef and pork and turkey pepperoni is made from turkey, usually from the dark meat. Turkey pepperoni is much lower in calories and fat than regular pepperoni. You can absolutely use regular pepperoni for your skillet if you’d prefer. It will change the texture, but you could even use mini pepperoni if you’d like. My turkey pepperoni was greasy enough I didn’t need to add any oil to my pan when I sauteed the pepperoni and vegetables. If needed, you can add a little avocado or olive oil to your pan. For vegetables, I used a combination of diced green and red peppers and diced onions. You can use any color or color combination of bell peppers you’d like for your skillet.
What goes into the sauce for this keto pepperoni pizza red cabbage skillet?
For this skillet, we make a variation of homemade pizza sauce. But since we’ll be cooking cabbage in the sauce, I did switch up the ingredients a bit from how I usually make pizza sauce. We combine chicken broth, tomato paste, keto sugar, Italian seasoning, salt, and pepper to make a delicious and fun sauce for our dish. For the sugar, I used the Swerve brand. It contains zero calories and zero net carbs, and it’s delicious. Pepperoni is fairly salty, so we only need to add a little salt and pepper to our sauce. The sauce cooks down a bit after we add our red cabbage, and it becomes perfectly thick and delicious!
How can I serve this keto pepperoni pizza red cabbage skillet?
This dish can be served as a main dish, or it can be served as a side dish. You could serve this with a salad or with a keto soup to make an awesome meal. It would also pair nicely with a side of vegetables. If you’d like, you could serve this with some keto bread or biscuits. This skillet would also make a fun addition to any brunch menu!
