It’s a great choice for dishes such as this and for any stir fry type of dish, as it comes out extremely tender and juicy. Another good option for this dish would be to use a pork tenderloin. I cut my pork chops into bite sized pieces and try to cut them into uniform sized pieces. If you’d like, you could also cut yours into strips. When you saute your pork, you’ll want to make sure you don’t overcook it. This will ensure your pork turns out perfectly tender and juicy. If you don’t want to use pork, you can always substitute chicken breasts or chicken thighs for this dish!

For our vegetables, we combine green and red peppers, garlic, and green onions. Yum! I love the color combination of green and red peppers, but you can use any bell pepper you’d like for this dish. Fresh ginger adds amazing flavor to this dish. You can substitute with ginger paste as well. Fried rice just isn’t fried rice without the addition of eggs, so of course we add them to our fried rice.😊For our rice, we are using cauliflower rice. It’s an amazing low carb substitute for rice and works perfectly for this dish. We substitute broccoli for the higher carb peas found in most fried rice dishes. It brings amazing flavor and texture to our rice! Then for seasoning, we add tamari and fish sauce. I use Red Boat fish sauce since it contains no added sugar and it’s delicious!

This is an amazingly filling dish that can be served as a complete meal in itself. If you’d like, you can top your rice with some additional chopped green onions. You can always start your meal with a side salad. A Caesar salad is always an excellent choice. A keto soup would also make a great pairing for this fried rice. You can also serve a couple of appetizers, then serve this fried rice as a main dish. Any keto vegetable could be added as a side for this cauliflower rice. That’s always makes for an awesome meal. It’s also a wonderful choice to end your meal with a decadent keto dessert!

Keto Pork Fried Cauliflower Rice
This keto pork fried cauliflower rice is incredibly fresh and flavorful! When you’re craving a delicious Chinese meal, this is an awesome choice!
Ingredients
- 2 tablespoons toasted sesame oil
- 1½ pounds boneless pork chops, cut into ½ inch pieces
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ cup diced green peppers
- ½ cup diced red peppers
- 2 garlic cloves, minced
- 2 green onions, chopped
- 1 tablespoon fresh grated ginger
- 3 eggs, lightly beaten
- 3 cups cooked cauliflower rice
- 1 cup cooked and chopped broccoli
- ¼ cup tamari
- 1 tablespoon fish sauce
- Optional: top with additional chopped green onions
Instructions
1. In a large skillet, heat sesame oil over medium high heat. Once hot, add pork. Season evenly with salt and pepper.
2. Saute pork until cooked through. Remove to a plate. Do not drain oil from skillet.
3. Add peppers to skillet. Saute until vegetables start to soften, 5-7 minutes. Add garlic, onions, and ginger during last minute.
4. Push vegetables to the sides of the pan. Add eggs to the center of the pan. Cook and stir until eggs are softly set. Stir to combine with vegetable mixture.
5. Add cauliflower rice, broccoli, tamari, and fish sauce. Stir to combine. Cook until heated through.
6. Top with additional chopped green onions if desired.
