I used three kinds of nuts to make this delicious granola. Our nuts add awesome taste and texture, and they also help to keep our dish low in carbs. Nuts do vary in their carb count and for this reason I usually avoid cashews and pistachio nuts because they’re higher in carbs than other nuts. For this granola, I used a combination of pecans, walnuts, and almonds. You have some other great choices for the kind of nuts you use for your granola. Macadamia nuts are a wonderful choice. If you use these, I’d recommend cutting them in half or chopping them. Brazil nuts are also a great choice, but again, you’ll want to chop them up a bit. A couple other options include adding some peanuts or hazelnuts to this granola.
What other ingredients go into this keto pumpkin chocolate granola?
To our nuts, we add unsweetened coconut, pumpkin seeds, and sunflower seeds. You can use coconut flakes or coconut chips, but you will want to make sure you’re using unsweetened. The pumpkin and sunflower seeds add amazing crunch and flavor to this granola. Next, we add melted butter, keto maple syrup, and vanilla. I used Lakanto maple syrup, but you can use your favorite keto syrup to make this granola. To help create the perfect sweetness for our granola, we add both brown and granulated keto sugar. The pumpkin pie spice adds an amazing, but not overpowering level of spice to this granola! You can add even more if you’d like. Last, we add some keto chocolate chips. I used semi-sweet, but you can substitute with milk or dark chocolate if you’d prefer.

This granola is amazingly easy and fun to make, but there are a few things you can do to ensure yours turns out perfectly. First, you’ll want to chop your nuts into smaller pieces. You can simply cut your almonds in half, then you can use a knife or your hands to break your pecans and walnuts into smaller pieces. Next, when you add your butter, syrup, and vanilla mixture to the nut mixture, you’ll want to stir well to ensure everything gets coated. This will then ensure the sugar and pumpkin pie spice mixture will adhere to the nut mixture. After stirring your granola at the halfway point, you’ll want to keep an eye on it to make sure it browns but doesn’t burn. Last, after removing your granola from the oven, you’ll want to immediately stir in the chocolate chips so they’ll melt nicely!

Ingredients
- 1 cup pecans, chopped
- 1 cup walnuts, chopped
- ½ cup almonds, chopped
- ⅓ cup unsweetened coconut chips or flakes
- ¼ cup pumpkin seeds
- ¼ cup sunflower seeds
- 3 tablespoons butter, melted
- 2 tablespoons keto maple syrup
- 1 teaspoon vanilla
- 3 tablespoons brown sugar substitute (Swerve)
- 3 tablespoons granulated sugar substitute (Swerve)
- 2 teaspoons pumpkin pie spice
- ½ cup keto semi-sweet chocolate chips
Instructions
1. Pre-heat oven to 325 degrees. Line a large rimmed baking sheet with parchment paper. Set aside.
2. In a large mixing bowl, add pecans, walnuts, almonds, coconut, pumpkin seeds, and sunflower seeds. Set aside.
3. In a small mixing bowl, add melted butter, keto maple syrup, and vanilla. Stir to combine.
4. Pour butter mixture over nut mixture and stir to completely coat nut mixture.
5. In a small mixing bowl, add brown sugar, granulated sugar, and pumpkin pie spice. Stir to combine. Add to nut mixture and stir to completely combine.
6. Spread in an even layer onto prepared baking sheet.
7. Bake for 20 minutes, stirring at halfway point.
8. Remove from oven and immediately stir in chocolate chips.
9. Allow to cool and break apart. Serve immediately or store in an airtight container until ready to serve.
