Radishes have become one of my new best friends! 😊 They are surprising low carb and can be prepared in numerous ways and can be used in a wide variety of recipes. They can be roasted, boiled, or eaten raw. You can substitute radishes for potatoes in your favorite breakfast, side, and salad recipes. I love how this recipe turned out. Roasting the radishes takes quite a bit of the bite out of them. And combining them with some all-time family favorite traditional potato salad ingredients make this a truly special dish!

I was surprised to learn radishes are such a low carb keto vegetable. A whole cup of radishes comes in at only 2 net carbs! Radishes contain calcium, folate, magnesium, potassium, vitamin B6, Vitamin C, and fiber. Radishes are also low in calories. One cup contains about 20 calories!

I used a combination of red radishes and Easter egg radishes for this salad. You can use all red radishes. I think the color combination of using both kinds is fun! *Cut up your radishes into whatever size you would like. They do shrink a little while roasting. I cut the smaller ones in half, the medium ones into fourths, and the larger ones into sixths or eights.
*I love the fresh dill in this recipe. If you don’t have fresh dill, you can substitute dried dill. You can substitute 1 teaspoon of dried dill for the 1 tablespoon of fresh dill.

Keto Radish Potato Salad

Ingredients
- 2 pounds radishes, chopped
- 3 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 stalk celery, chopped
- 1 tablespoon onion, diced
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tablespoon pickle juice
- ½ tablespoon Dijon mustard
- ½ tablespoon spicy brown mustard
- 1 tablespoon fresh dill, chopped
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 hard boiled eggs, chopped
Instructions
1. Pre-heat oven to 400 degrees.
2. Chop your radishes into bite size pieces.
3. In a large baking sheet or pan, pour olive oil. Add chopped radishes and stir to coat radishes in the oil. Sprinkle with salt and pepper.
4. Roast radishes for 40-50 minutes, or until radishes fork tender. Stir every 10 minutes.
5. Remove radishes from oven and place in a large mixing bowl. Set aside to cool while you make the dressing.
6. Chop celery and dice onion and combine with roasted radishes.
7. In a small mixing bowl, combine mayonnaise, sour cream, pickle juice, both mustards, dill, salt and pepper. Stir to combine.
8. Pour dressing over radish mixture and stir to combine completely. Add chopped hard boiled eggs and stir gently to combine. Serve immediately at room temperature or refrigerate 4 hours or overnight to serve chilled.
