This keto ranch chicken salad is amazingly flavorful and will be a huge hit every time you serve it!
We use a homemade ranch seasoning mix to make this keto ranch chicken salad. This is a quick and easy dish to make, and it’s great for a lunch, brunch, or dinner option. You can serve this chicken salad immediately or you can make it a day or two in advance and refrigerate until ready to serve.
Let’s talk about the chicken we use to make this salad!
You have some great options for the chicken you use to make this chicken salad. I bought a whole chicken, then boiled it until it was cooked through. I used ½ dark meat and ½ white meat to make my chicken salad. Alternately, you can use all white meat or all dark meat to make yours. You can also use grilled or baked chicken to make this dish. A quick and easy option is to use rotisserie chicken! I roughly chopped my chicken. Alternately, you can dice or shred your chicken for this dish. To our chicken, we add diced celery and diced onions. I used a yellow onion to make this salad, but a red or white onion would work well too. You can add even more celery and onion than the recipe calls for if you’d prefer.
How do I make the dressing for this keto ranch chicken salad?
The dressing for this chicken is amazingly delicious and also amazingly easy to make! To create the creamy base for our dressing, we add both keto mayonnaise and sour cream. When buying mayonnaise, you’ll want to check nutrition labels to make sure there is no added sugar or other ingredients you don’t want. One of my favorites is the Chosen Foods brand avocado oil mayonnaise. You can also easily make homemade mayonnaise, which is incredibly creamy and delicious. To our mayonnaise and sour cream, we add Dijon mustard and a homemade ranch seasoning mix. This mix includes parsley, garlic and onion powder, chives, dill, salt, and pepper. All of our herbs are dried, so you likely have all the seasoning mixture ingredients in your pantry! To make our dressing, we simply add all our dressing ingredients to a mixing bowl, then stir or whisk to combine.
