This keto Reuben coleslaw is a fun coleslaw twist that is also incredibly delicious! Corned beef brisket, Swiss cheese, and sauerkraut are added to our coleslaw mix along with a homemade Thousand Island dressing to make this creamy coleslaw! Enjoy!
Let’s talk about corned beef!
Corned beef is beef brisket that has been salt-cured. For this coleslaw, I made homemade corned beef in the instant pot. I used the seasoning packet that came with the corned beef, which contains similar ingredients to the herbs and spices used for pickling. Although they’ll vary by brand, the most common ingredients in the spice pack contain bay leaves, peppercorns, dill seeds, and mustard seeds. A good thing to know about corned beef is it comes in two different cuts, flat cut or point cut. The flat cut is leaner and more uniform in size than the point cut. You can use either cut for this coleslaw. I used a point cut corned beef for mine. If you’d like, you can always use cooked deli corned beef as well. You could also use pastrami or turkey pastrami for this dish.
What other ingredients go into this keto Reuben coleslaw?
I used a bag of coleslaw mix for my dish. It’s a quick and easy way to make coleslaw. And although I normally don’t eat carrots because of their carb count, there are so few in coleslaw mixes that the carb count remains low. If you’d like, you can also finely chop some green and red cabbage to make your own coleslaw mix. We then add the other traditional Reuben ingredients to our coleslaw, Swiss cheese and sauerkraut! I wasn’t sure how all that would taste together, but I was over the moon pleased with the result. It’s actually one of my favorite coleslaw versions. For my cheese, I chose to cube it. If you’d like, you could alternately shred your cheese. When buying sauerkraut, it’s good to know the regular usually contains just cabbage, water, and salt while Bavarian sauerkraut adds both caraway seeds and sugar.
How do I make the dressing for this keto Reuben coleslaw?
I have modified the amounts from my homemade keto Thousand Island dressing to make the dressing for this coleslaw! It is a creamy and low carb dressing that is also delicious! We start with keto mayonnaise. I used the Chosen Foods brand avocado oil mayonnaise for my coleslaw. To this we add keto ketchup, unsweetened dill relish, white wine vinegar, and finely diced onion. I love the Primal Kitchen ketchup and that’s what I used for my dressing. We then add a little keto granulated sugar which helps to give great balance of flavors to our dressing. For seasonings, we add garlic powder, paprika, salt, and pepper. This dressing couldn’t be much easier to make. You simply combine all these ingredients in a small mixing bowl and stir or whisk to combine!

Ingredients
- 16 ounce bag coleslaw
- 8 ounces cooked, chopped corned beef
- 8 ounces Swiss cheese, cubed
- 1 cup sauerkraut, drained
- ½ cup keto mayonnaise
- 2 tablespoons keto ketchup
- 1 tablespoon unsweetened dill relish
- 1 tablespoon white wine vinegar
- ½ tablespoon finely diced onion
- ½ tablespoon granulated sugar substitute (Swerve)
- ⅛ teaspoon garlic powder
- ⅛ teaspoon paprika
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
Instructions
1. In a large mixing bowl, add coleslaw mix. Cut or tear up any large pieces.
2. Add corned beef, Swiss cheese, and sauerkraut. Stir to combine. Set aside.
3. In a small bowl, add remaining ingredients. Stir to combine.
4. Pour dressing over coleslaw mixture. Toss to combine.
5. Refrigerate 30-60 minutes before serving.
