Ingredients
For the chicken:
- 5-7 pound whole chicken
- 1 lemon, divided
- 1 head garlic
- 1 onion
- 1 tablespoon avocado oil
- 2 tablespoons butter
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon poultry seasoning
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
For the gravy:
- Chicken drippings
- 3 tablespoons heavy whipping cream
- ½ cup chicken broth
- Salt and pepper to taste
- 1 teaspoon xanthan gum
Instructions
For the chicken:
1. Pre-heat oven to 400 degrees.
2. Line a 13x9 inch baking pan with foil. Set aside.
3. Remove neck, gizzard, etc. from inside of chicken. Discard or use as desired. Rinse chicken under cold water. Dry chicken with paper towels. Place chicken into prepared baking pan.
4. Cut lemon and garlic head in half. Coarsely chop onion. Set aside.
5. In a small saucepan, add avocado oil and butter and the juice of ½ of the lemon. Heat over low heat until butter is melted. Stir to combine ingredients.
6. In a small bowl, combine salt, pepper, poultry seasoning, onion powder, and garlic powder. Sprinkle 1 teaspoon of seasoning mix into chicken cavity. Place remaining half of lemon inside the cavity of the chicken. Then place garlic and onion inside chicken cavity.
7. Drizzle avocado oil mixture over chicken, rubbing over entire surface of chicken. Sprinkle remaining seasoning mix onto chicken. Truss your chicken if desired.
8. Bake chicken, uncovered, for 1½-2 hours, or until temperature measures 170 degrees.
For the gravy:
1. Carefully add chicken drippings into a large skillet. Add heavy whipping cream and chicken broth. Whisk to combine and bring mixture to a boil over medium high heat.
2. Add salt and pepper to taste.
3. Decrease heat to medium. Sprinkle xanthan gum over mixture. Whisk to combine. Continue to cook and whisk until mixture thickens, 1-2 minutes.
