This keto roasted tomato basil soup is fresh and creamy and incredibly delicious! Roasted tomatoes, red peppers, onions, and garlic are combined with fresh basil to create an awesome depth of flavors. This is one of my go-to soups and gets rave reviews every time I make it! Enjoy!

Roasting the tomatoes takes this soup to the next level! It brings out an amazing sweetness and caramelizes the tomatoes. In the same baking pan, we’re also going to roast red peppers, onions, and I like to roast my garlic as well. Make sure you use a large baking pan so your tomatoes can be placed in a single layer. I roasted my tomatoes, peppers, onions, and garlic at 400 degrees for 45 minutes and they were perfect. You can either roast a whole head of garlic or you can omit this step and simply add unroasted garlic to your soup. I love having extra roasted garlic in my refrigerator, so I always roast mine when I make this soup! When you add your roasted goodies to your stockpot, add all the liquid from your baking pan too.

This soup is not difficult to make, but there are a few helpful things to know about making it. First, I added 4 cloves of garlic to my soup. You can add more if you’d like. Next, I used just a touch of keto sugar for my soup to cut the acidity of the tomatoes and to help balance the flavors in this soup. I recommend, after bringing your soup to a boil, that you decrease the heat and simmer for at least 30 minutes. If you have time, you can let it simmer for longer. I blended my soup until it was completely blended and smooth. If you’d like a chunkier soup, you can blend for the consistency you’d like. Last, I love the creamy richness that comes from the addition of heavy whipping cream. You can make this soup with or without the cream, based on your preference.
What can I serve with this keto roasted tomato basil soup?
There are some great low carb keto options to serve with this soup. You can serve this as a soup and salad combination with your favorite green salad. A Caesar salad would be a great choice. You could also make a keto sandwich or lettuce wrap to serve alongside this soup. To keep your meal simple, you could serve this soup with your favorite keto bread, crackers, biscuits, cornbread, or English muffins. If you’d like to add some protein, you could serve this soup with some grilled sausage, sauteed shrimp, or baked chicken.

Keto Roasted Tomato Basil Soup
This keto roasted tomato basil soup is true comfort food! It is one of my family’s favorite dishes and I hope it will become one of your favorites as well!
Ingredients
- 4 tablespoons olive oil, divided
- 3 pounds tomatoes, cut in half
- 1 medium red pepper, chopped
- ½ cup chopped onion
- 4 garlic cloves
- 1 teaspoon salt
- 1 teaspoon pepper
- 5 cups chicken broth
- 1 (28 ounce) can diced tomatoes
- 1 teaspoon granulated sugar substitute (Swerve)
- 2 cups fresh basil leaves
- 2 tablespoons chopped fresh parsley
- 1 cup heavy whipping cream
- Optional: garnish with additional basil or parsley
Instructions
1. Pre-heat oven to 400 degrees.
2. In a large baking pan, drizzle 2 tablespoons olive oil. Tilt pan to coat bottom evenly with olive oil.
3. Place tomatoes, cut side up, into baking pan, along with chopped peppers and onions. Drizzle with remaining olive oil, salt, and pepper.
4. If desired, you can roast your garlic at this time. Using a whole head of garlic, cut off the top of the garlic. Set garlic, cut side up onto a piece of aluminum foil. Drizzle a little olive oil over the garlic. Wrap garlic completely in foil. Place into baking pan. You can omit this step and use unroasted garlic as well.
5. Roast tomatoes, peppers, onions, and garlic (if roasting) for 45 minutes. Stir peppers and onions at the halfway point.
6. In a large stockpot, add roasted tomatoes, peppers, onions, 4 garlic cloves, and all liquid from baking pan.
7. Add chicken broth, diced tomatoes, sugar, basil, and parsley. Stir to combine. Over high heat, bring mixture to a boil. Decrease heat to medium. Simmer, uncovered, for 30-40 minutes.
8. Using an immersion blender, stand blender, or food processor, blend mixture until smooth.
9. Add heavy whipping cream and stir into soup.
10. Garnish with additional basil or parsley if desired.
