How do you keep these keto root beer floats low carb?
The secret to these floats is using chilled sweetened heavy whipping cream in place of ice cream. You’ll be surprised with the result! Simply combine heavy whipping cream with keto powdered sugar. I used the Swerve brand of powdered sugar. It contains zero calories and zero net carbs; and it tastes awesome! Adding a couple teaspoons of vanilla increases the rich flavor of these floats. Beat the mixture until stiff peaks form. Then drop by mounds, each containing 2 tablespoons of the mixture, onto a baking dish. Chill in the freezer for 1-2 hours and there you have it! This tastes so good and will give your favorite vanilla ice cream some serious competition!😉
Let’s talk about keto root beer!
I purposefully used two different brands of keto root beer for this recipe to show you the differences between the two. I used Virgil’s zero sugar root beer for one of the floats and Zevia ginger root beer for the other. Both contain zero calories and zero net carbs. I think they both taste similar. The big difference between the two is how they look! Virgil’s root beer is brown and Zevia root beer is clear. Take your pick as they are both delicious!
Can I use any other flavor soda besides root beer for these floats?
Yes! Growing up, I used to play tennis with my older brother, Tom. He’d then drive us to our local drive-in restaurant where we’d order orange floats. Oh man, they were the best! Keto Root Beer Float
This keto root beer float is delicious and so much fun to make! You can also substitute your favorite flavor of keto soda and have an awesome low carb float any time you’d like!
Ingredients
- 1 cup heavy cream
- 2 tablespoons powdered sugar substitute (Swerve)
- 2 teaspoons vanilla extract
- 1 (12 ounce) can keto root beer
- 1 tablespoon heavy whipping cream
Instructions
1. Place medium mixing bowl and beaters in freezer 20 minutes prior to using.
2. Line the bottom of an 11x9 inch baking dish with parchment paper. Set aside.
3. Add heavy cream, powdered sugar, and vanilla to chilled mixing bowl.
4. Beat mixture until heavy peaks form. Drop heavy cream mixture in 2 tablespoon dollops onto prepared baking dish. Freeze for 1-2 hours.
5. Pour 12 ounces of root beer into a large glass. Add 1 tablespoon of heavy whipping cream and stir. Add a 2 tablespoon dollop of frozen whipped cream mixture on top of root beer.
6. Serve immediately.
Notes
1 cup of whipping cream makes 1 ½-2 cups of whipped cream.
This recipe will make enough whipped cream mixture to make 12-16 root beer floats. You can also use more than one dollop in your float, you’ll just need to adjust nutritional information accordingly.
