Let’s talk about cranberries!
I get so excited when Autumn comes around and I start to see fresh cranberries in stores! Many fruits are too high in carbs to be included in a keto plan; but most berries, including cranberries, are a wonderful keto choice! One cup of cranberries contains about 8 net grams of carbs. Cranberries are also a low-calorie food that provides us with a source of copper, manganese, and vitamins A, C, E, and K. I’ve made fresh cranberry sauce for many years, and it’s one of our favorite traditions to make for holiday meals. It’s so fun to watch and listen to the cranberries pop while they cook. Most of your cranberries will pop, but some will remain whole. You can either leave these whole or you can use a spoon to smash some of them depending on what consistency you prefer for your cranberry sauce.
What other ingredients go into this keto rum vanilla cranberry sauce?
Cranberries are quite tart and have a bitterness to them. For these reasons, they need a little help to add the perfect level of sweetness and a nice touch of spice to make this delicious cranberry sauce. I added both keto brown and keto granulated sugar to make this cranberry sauce. They combine to create amazing sweet flavors for this sauce. I used the Swerve brand for both my sugars. These sugars contain zero calories and zero net carbs, and are amazingly similar in their sweetness level to regular sugar. To add amazing flavor and acidity, we add both lemon zest and lemon juice. The addition of rum and a generous amount of vanilla adds an amazing depth of flavor and enhances all the other flavors in this sauce. Then to add the perfect spice level we add some pumpkin pie spice.
What are some ways I can serve this keto rum vanilla cranberry sauce?
You have some awesome keto options for serving this delicious cranberry sauce. Of course it pairs perfectly with turkey, but you can also serve it with beef, chicken, pork, and seafood mains. You can serve this sauce with all kinds of grilled meats, roasts, meatloaf, or any kind of fish. It’s also amazing served as a condiment for burgers, brats, keto sandwiches, and lettuce wraps. Some other options for serving this sauce include using it as a topping for keto desserts such as brownies, cakes, cheesecakes, and ice cream. You can also serve it as a substitution for jam as a topping for keto biscuits, chaffles, cornbread, English muffins, and pancakes.
