Let’s talk about our main ingredients!
The base for this dish is cheese and salami. I used all colby jack cheese, but you have some great substitution options for the cheese or combination of cheese you use. Some great options include cheddar, colby, gouda, havarti, mozzarella, provolone, and Swiss cheese. If you want to add a little heat, you could use pepper jack cheese. I cubed my cheese and cut my salami into bite sized pieces. I added a chopped red bell pepper to this dish, but you can use any color or color combination of bell peppers you’d like. Last, I added cornichon pickles to this dish. Cornichons are small pickles which are seasoned, giving them a nice tangy and sometimes slightly sweet flavor. They’re also the perfect size for this appetizer. Alternately, you can use small dill pickles or can use larger pickles and chop them into bite sized pieces.
