I used fresh wings to make these salt and vinegar wings. To prepare fresh wings, simply separate the drumettes and the wingettes. Discard the tips. I’ve been preparing wings for a while. When my son wanted to learn how to do this, he did an internet search and watched a how-to video. He then taught my daughter how to cut and separate wings! Although we used fresh wings, you can use frozen wings for this recipe. As with all poultry, just make sure you fully cook them before tossing them in the sauce.

This recipe contains just the right balance of salt and vinegar. I love the combination of apple cider vinegar and champagne vinegar. But you could use all apple cider vinegar if you’d like. The salt, garlic powder, and onion powder when combined with the vinegar give these wings the perfect salty and vinegary balance. And because these wings are extremely low carb and keto, you can eat them whenever you’d like! And if you are like my daughter and me, you will want to eat them often!😊

Keto Salt and Vinegar Wings

Ingredients
- 4 pounds chicken drumettes and wingettes
- 2 tablespoons olive oil
- 2½ teaspoons salt, divided
- ½ cup apple cider vinegar
- ¼ cup champagne vinegar
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
Instructions
1. Pre-heat oven to 425 degrees.
2. If necessary, separate wings into drumettes and wingettes, discarding wing tips.
3. Drizzle 1 tablespoon olive oil in a large rimmed baking sheet or pan.
4. Place chicken pieces in the pan. Drizzle with remaining 1 tablespoon olive oil. Sprinkle with 1 teaspoon salt.
5. Bake for 30 minutes. Flip pieces and bake for an additional 30 minutes, or until chicken is brown and crispy and cooked through.
6. Make the sauce during the last 30 minutes of baking the wings. In a small mixing bowl, add apple cider and champagne vinegar. Add 1½ teaspoons salt. Stir to combine. Let set for 10 minutes, stirring occasionally. Add garlic powder and onion powder. Stir to combine.
7. When chicken is cooked through, remove pieces with tongs and place in a large mixing bowl. Pour sauce over wings. Stir numerous times to completely coat chicken in sauce. Serve immediately.
