We combine some awesome ingredients and seasonings to make this soup incredibly delicious and incredibly low carb! For our vegetables, we use fresh bell peppers, onions, and garlic. I used green and orange peppers, but you can use any combination you’d like. Sauerkraut is a great low carb and keto option which provides incredible flavor and tang to this soup. Our bacon and kielbasa are naturally low carb and add amazing flavor and texture to this soup. I love the combination of beef and chicken broth for this soup, which add incredible flavor while keeping the carb count low.
We add spicy brown mustard, lemon juice, freshly chopped parsley, keto sugar, two types of paprika, caraway seeds, Italian seasoning, salt, pepper, one bay leaf, and tomato paste which are all low carb and which combine to create an amazing broth for our soup. I used fresh lemon juice for my soup, but you can use fresh or bottled. You can use Dijon or yellow mustard if you’d like. Also, you can use hot paprika or regular paprika if you’d prefer. The riced cauliflower in this dish adds taste and texture and helps to make this soup incredibly hearty and low carb. Heavy cream gives our soup the perfect richness. I prefer to top my soup with sour cream and stir it into my bowl of soup.😊

Keto Sauerkraut Sausage Soup

Ingredients
- 6 ounces bacon, diced
- ½ cup diced green peppers
- ½ cup diced orange or red peppers
- ¼ cup diced onion
- 2 garlic cloves, minced
- 14 ounces kielbasa (or cooked sausage of your choice), diced
- 32 ounces sauerkraut, drained
- 4 cups beef broth
- 3 cups chicken broth
- 2 tablespoons spicy brown mustard
- 1 tablespoon lemon juice
- ¼ cup roughly chopped parsley
- 2 teaspoons granulated sugar substitute (Swerve)
- 2 teaspoons Hungarian paprika
- 2 teaspoons smoked paprika
- 1 teaspoon caraway seeds
- 1 teaspoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 bay leaf
- 3 tablespoons tomato paste
- ¼ cup water
- 12 ounces riced cauliflower
- ½ cup heavy whipping cream
- Optional toppings: sour cream, additional chopped parsley
Instructions
1. In a medium skillet, fry bacon until desired crispness. Remove bacon and place into a large stockpot. Drain all but 2 tablespoons bacon grease from skillet.
2. In reserved bacon grease, over medium high heat, saute peppers and onion until they start to soften, 4-5 minutes. Add garlic during last minute.
3. Add peppers, onion, and garlic to bacon in stockpot. Set aside.
4. In skillet, over medium high heat, saute kielbasa until browned, about 10 minutes. Add kielbasa to stockpot with bacon and vegetables.
5. To stockpot, add sauerkraut, beef broth, chicken broth, mustard, lemon juice, parsley, sugar, paprikas, caraway seeds, Italian seasoning, salt, pepper. and bay leaf. Stir to combine.
6. In a small bowl, add tomato paste and water. Stir until mixture is smooth. Add to stockpot.
7. Over high heat, bring mixture to a boil. Decrease heat to medium and simmer, uncovered, for 20 minutes, stirring occasionally.
7. Remove and discard bay leaf. Add riced cauliflower and heavy whipping cream. Stir to combine. Simmer for 5-10 minutes, or until cauliflower is cooked.
8. Top with sour cream and additional chopped parsley if desired.
