I’ve taken the ingredients from one of my favorite dips and turned it into a keto spinach artichoke chicken salad. This salad is creamy, delicious, and low carb. This dish comes together in under 30 minutes, and I hope you and your family enjoy it as much as we do!
Let’s talk about the ingredients in this chicken salad!
Our recipe starts with cooked and diced chicken. I had boiled a whole chicken and used some of the meat from that for my chicken salad. I used white and dark meat. You can use all white meat, all dark meat, or a combination for your salad. If you’d like, you could also use a rotisserie chicken for a quick option. It doesn’t take a lot of diced peppers and onions to add color, flavor, and texture to this dish. I love the texture from fresh spinach and that is what I would recommend for this salad. For my artichoke hearts, I used ones packed in water, not oil.
The dressing for our salad combines cream cheese, mayonnaise, and sour cream to make for an awesome rich and creamy salad! I usually use Chosen Foods avocado oil mayonnaise; but you can use any keto mayonnaise you’d like. We add garlic powder, salt, pepper, and smoked paprika for our seasonings. For our cheeses we combine shredded mozzarella and grated Parmesan. I prefer to shred and grate my own cheese for a few reasons. This way I know there are no added ingredients and I think it tastes and melts better.😉
Is this keto spinach artichoke chicken salad difficult to make?
This salad is incredibly easy to make! I do have a few tips for you though. First, you can dice or shred your chicken based on your preference. Next, you’ll want your cream cheese to be softened before using. I recommend using an electric mixer to beat your cream cheese, mayo, and sour cream. You’ll want to beat it until it gets as smooth as possible. I beat my mixture for about two minutes. There may be some small lumps of cream cheese in your dressing, and that’s normal. Last, you can serve this chicken salad right away, or store in a covered container in the refrigerator until ready to serve.
How can I serve this keto spinach artichoke chicken salad?
This salad is delicious served all on its own in a bowl with a big spoon! Use your favorite keto bread, biscuit, or English muffin to make an awesome sandwich with this chicken salad. You could also make a terrific lettuce wrap with it. You could also add some of this chicken salad to a green salad and any other fixings you’d like! This chicken salad can even be served as a cold dip swerved with your favorite keto crackers, vegetables, cheese whisps, or pork rinds.

Ingredients
- 4 cups cooked and diced chicken
- 3 tablespoons diced red peppers
- 2 tablespoons diced onion
- 2 cups chopped fresh spinach
- 12 ounces artichokes, drained and chopped
- 4 ounces cream cheese, softened
- ½ cup keto mayonnaise
- ½ cup sour cream
- ¼ teaspoon garlic powder
- ¼ teaspoon pepper
- ¼ teaspoon salt
- ¼ teaspoon smoked paprika
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
Instructions
1. In a large mixing bowl, combine chicken, peppers, onion, spinach, and artichoke hearts. Stir to combine. Set aside.
2. In a medium mixing bowl, combine cream cheese, mayonnaise, sour cream, garlic powder, pepper, salt, and smoked paprika. Using an electric mixer, beat until mixture is smooth and combined, 1-2 minutes.
3. Pour dressing over chicken mixture. Stir to completely combine. Add cheeses and stir to combine. Serve immediately or chill in the refrigerator until ready to serve.
