Spinach is an awesome food choice when following a low carb keto plan! It’s low in calories and in carbs but rich in nutrients. I used baby spinach for my salad, but regular spinach works great too. Baby spinach is simply spinach that’s harvested at an earlier time, so its leaves are smaller. For this salad, we’re using raw spinach. I chose to remove the stems of my spinach for this salad, but you can leave them on if you’d like. I also love cooked spinach. You can blanch, saute, or steam spinach. One of my favorite dishes is keto creamed spinach, which is the closest I’ve gotten to my grandma’s creamed spinach, which I always loved! Another great thing about spinach is that you add it to casseroles, dips, egg dishes, pestos, sauces, smoothies, and soups!

This salad is amazingly delicious while also being amazingly easy to make. We top our spinach with bacon and hard boiled eggs. I used thick cut bacon and used one piece for each of the four salads this recipe makes. If you’d like, you can use regular cut bacon for your salad and you can use even more bacon per salad as well. I diced the raw bacon and fried it until it was nice and crisp. Alternately, you can fry then crumble your bacon. You will want to reserve 3 tablespoons of bacon fat to use for the dressing. When I make a big batch of hard boiled eggs, I cook them on the stovetop. But for small batches, I use my Dash rapid egg cooker. I love, love, love this adorable appliance.😊It’s optional, but you can also top your salad with some thinly sliced red onions.

The dressing for this spinach salad is truly amazing! I remember my brother telling me years ago about this salad and how much he loved it. Of course, he was in Wisconsin and I was in Colorado, so I never got to try his salad! But now I’ve created a keto version and my family loves it. Even my son, who isn’t usually fond of spinach, ate half a salad and then went back and ate the other half. We start by heating our reserved bacon fat in the same skillet we cooked our bacon in. Once heated, we add red wine vinegar, keto granulated sugar, Dijon mustard, salt, and pepper. Then we just whisk the ingredients together until they’re combined and the dressing is heated through. You can either pour or spoon the dressing over the salad which wilts the spinach and creates an amazingly delicious dish!

Ingredients
For the spinach salad:
- 4 slices thick cut bacon, diced
- 6 ounces fresh spinach, stems removed
- 4 hard boiled eggs, sliced
- Optional: thinly sliced red onion
For the warm bacon dressing:
- 3 tablespoons bacon fat
- 3 tablespoons red wine vinegar
- 2 teaspoons granulated sugar substitute (Swerve)
- ½ teaspoon Dijon mustard
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Instructions
For the spinach salad:
1. In a medium skillet over medium heat, cook bacon to desired crispness level.
2. Use a slotted spoon to remove bacon to paper towel lined plate. Reserve 3 tablespoons bacon fat in skillet.
3. Divide spinach evenly between 4 plates or bowls.
4. Top spinach evenly with hard boiled eggs and with cooked diced bacon. Top with red onions if desired.
For the warm bacon dressing:
1. Over medium low heat, warm bacon fat. Once heated, add remaining dressing ingredients.
2. Whisk to combine ingredients and cook until heated through.
3. Pour dressing evenly over spinach salads. Serve immediately.
Notes
If you'd like, you can serve your salad onto a large platter. You'll place the spinach onto the platter, top it evenly with the bacon, eggs, and onions (if using). Then simply pour or spoon the warm dressing evenly over the salad.
