Keto strawberries and cream is packed full of fresh strawberries combined with an amazing sweetened cream! Enjoy!
When you want an easy yet elegant dessert, keto strawberries and cream is a perfect choice! We start with fresh strawberries macerated with keto sugar, then top them with keto sweetened whipped cream to make this amazing dessert. You can serve this for everyday meals or for holiday and special occasion meals!
Let’s talk about our strawberries!
Although most fruits are high in carbs, most berries can easily be incorporated into a low carb plan. One cup of strawberries contains approximately 7-8 net grams of carbs. For comparison, one cup of blackberries contains about 6 while one cup of raspberries contains about 7 net grams. Blueberries are quite a bit higher in carbs as 1 cup contains about 17-18 net grams. Strawberries are amazing eaten raw, just as they are. I often slice mine and toss with a little keto sugar to serve over keto ice cream. Strawberries can also be cooked or roasted and used to make jams, jellies, and sauces. For this dessert, I used large strawberries and quartered them. If your strawberries are smaller, you can simply halve them. We then toss them with some keto granulated sugar and allow them to set for 20-30 minutes, which makes them amazingly juicy and delicious!
How do I make the sweetened cream for this keto strawberries and cream dessert?
This is such an easy dish to make, but it results in an amazingly decadent dessert. While my strawberries are macerating, I make my sweetened cream. Making this sweet cream is almost the same as making keto whipped cream except we don’t beat it as long. To make this cream, we simply add our heavy whipping cream to a large mixing bowl along with some keto powdered sugar and vanilla extract. I used a handheld electric mixer to beat this cream until it just started to thicken but was still pourable. If you’d like, you can simply whisk your mixture until it starts to thicken. Also, if you want your cream thicker, you can beat it a little longer. You can give your cream a taste and add even more powdered sugar if you want it sweeter.
What are some ways I can serve these keto strawberries and cream dish?
You have some great options for serving this dessert. It comes together quickly, so it’s perfect for a special treat for everyday meals. It’s also quite elegant and very pretty to serve, so it’s also a super option for holiday or special occasion meals. You can serve strawberries and cream for lunch, brunch, or dinner. You can even serve it for breakfast or for a sweet snack choice. This dessert can be served immediately, or you can make it ahead of time and refrigerate your berries and sweet cream separately, then serve when you’re ready.
