Although many fruits are high in carbs and don’t fit with a low carb keto plan, strawberries and blackberries are a great option! One cup of strawberries contains 7-8 net grams of carbs. One cup of blackberries contains about 6 net grams of carbs. Of note, one cup of raspberries contains about 7 net grams of carbs. You could substitute raspberries for one of the fruits in this mousse if you’d like. Strawberries and blackberries are low carb and low-calorie foods which provide us with some important nutrients. I used the Swerve brand powdered sugar for my mousse. It contains zero calories and zero net carbs, and it tastes amazingly similar to regular powdered sugar. Vanilla is an amazing ingredient. It brings out the sweetness of the other ingredients and adds amazing flavor! I like to add a pinch of salt to enhance the flavors of the mousse. The last ingredient in our mousse is heavy whipping cream. This brings amazing creaminess to our mousse and gives it an incredible airy texture.

It is incredibly easy to make homemade sweetened keto whipping cream. When you make your own, you’ll know exactly what ingredients go into it and you’ll be amazed at how delicious it is! Start by chilling your mixing bowl and beaters in the freezer for 15-20 minutes. Then, to the chilled bowl, add 1 cup of heavy whipping cream, 2 tablespoons of keto powdered sugar, and 1 teaspoon of vanilla. Beat until stiff peaks form. Stiff peaks mean when you remove your mixer, the whipped cream forms a peak and it completely holds its shape. You can easily double or even triple this recipe. You can also use different extracts to create amazingly delicious whipped cream variations.

Ingredients
- 8 ounces cream cheese, softened
- 1 cup powdered sugar substitute (Swerve)
- 3 ounces blackberries, chopped
- 3 ounces strawberries, hulled and chopped
- 1 teaspoon vanilla
- ⅛ teaspoon salt
- 1 cup heavy whipping cream
- Optional: Top with keto whipped cream or additional berries, if desired
Instructions
1. In a large bowl, using an electric mixer, add cream cheese and powdered sugar. Beat until mixture is smooth and creamy.
2. Add blackberries, strawberries, vanilla, and salt. Beat until creamy and mostly smooth. There will be pieces of blackberries and strawberries in mixture. Scrape down the sides and bottom of bowl with a rubber spatula as needed to incorporate ingredients.
3. Add heavy cream. Beat until mixture thickens, 2-3 minutes.
4. Top with keto whipped topping or additional berries, if desired. Refrigerate leftovers.
