When you’re following a keto plan, there aren’t too many fruits you can eat because of their carb count. But the great news is that, in moderation, you can absolutely enjoy some of your favorite kinds of berries. For this milkshake, we’re using all strawberries. One cup of strawberries contains about 7-8 net grams of carbs. For comparison, one cup of blackberries contains about 6 net grams, and one cup of raspberries contains about 7. Blueberries are quite a bit higher, with one cup containing 17-18 net grams of carbs. Berries provide some important nutrients including copper, folate, manganese, and vitamins C and K. I used fresh strawberries for my milkshake, but frozen and thawed berries would also work. When mixing in your strawberries to the milkshake, you can beat to make your berries pieces as small or as large as you’d like.
What other ingredients go into this keto strawberry cheesecake milkshake?
Letting our berries macerate in a little balsamic really brings out the sweetness of the berries. You can let them set for longer than 10 minutes if you’d like. The creamy base for our milkshake comes from the combination of cream cheese, unsweetened coconut milk, and heavy whipping cream. You’ll want to make sure you’re using the coconut milk from a carton and not the kind from a can. You can substitute with unsweetened almond milk if you’d prefer. For the sugar, I used a combination of keto powdered and brown sugar. If you’d rather, you could use all powdered sugar for yours. I added just a little cinnamon to my milkshake as I just wanted a hint of cinnamon. You can give your milkshake a taste and add more if you’d like. Vanilla and salt round out our flavors perfectly!
How can I serve this keto strawberry cheesecake milkshake?
You can serve this milkshake as is for an awesome treat all on its own. I like to serve mine in pretty serving glasses. If you’d like, you can sprinkle or sift a little cinnamon or powdered sugar, or both, over your milkshake. It’s also incredibly easy to make homemade keto whipped cream to top your milkshake. I recommend chilling your mixing bowl and beaters in the freezer 15-20 minutes before using. Then to your chilled bowl, you’ll add 1 cup of heavy whipping cream with 2 tablespoons of keto powdered sugar and 1 teaspoon of vanilla. You’ll simply beat this mixture until stiff peaks form. Stiff peaks mean when you remove the beaters, they form peaks which completely hold their shape. For fun, you can also experiment with using different extracts in your whipped cream.

Ingredients
- 12 ounces strawberries, hulled and chopped
- 1 tablespoon balsamic vinegar
- 16 ounces cream cheese, softened
- 1 cup powdered sugar substitute (Swerve)
- ½ cup brown sugar substitute (Swerve)
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
- Pinch of salt
- 2 cups unsweetened coconut milk
- 1½ cups heavy whipping cream
- Optional: top with keto whipped cream
Instructions
1. In a medium mixing bowl, add strawberries. Pour balsamic vinegar over strawberries and stir to combine. Let set for 10 minutes.
2. Meanwhile, to a large mixing bowl, add cream cheese, powdered and brown sugar, vanilla, cinnamon, and salt.
3. Beat until mixture is smooth and creamy. Add strawberries. Beat until strawberries are combined and broken down into smaller pieces.
4. Add unsweetened coconut milk and heavy whipping cream. Beat until combined.
5. Serve immediately, or refrigerate until ready to serve. Top with keto whipped cream if desired.

Hi Evelyn! Coconut milk in a carton contains more water and is more diluted than coconut milk in a can. This also makes the carton milk much lower in calories and fat. It’s also lower in carbs. Hope you’ll get a chance to make the milkshake!
