It only takes 15 minutes to whip up this amazing keto strawberry cheesecake salad. This is a great dish for parties, potlucks, or any time you want a special treat!
This keto strawberry cheesecake is rich, creamy, and decadently delicious. It works great for a dessert, snack, or even breakfast option. And since it comes together so quickly, you can make this on even your busiest of days! Enjoy!
Let’s talk about strawberries!
Many fruits are high in carbs and can’t be included in a keto plan. The great news is that, in moderation, most berries are a wonderful keto choice. One cup of strawberries contains approximately 7-8 net grams of carbs. For comparison, one cup of blackberries contains about 6 net grams of carbs and one cup of raspberries contains about 7 net grams of carbs. Blueberries are quite a bit higher, with one cup coming in at approximately 17-18 net grams of carbs. Strawberries are low in calories but are rich in nutrients! They provide us with a source of folate, magnesium, manganese, potassium, and vitamins A and C. They also contain fiber. Raw strawberries are delicious eaten just as they are. They can also be added to desserts, dressings, salads, and smoothies. They can also be cooked or roasted and used in jams, jellies, and sauces.
What other ingredients go into this keto strawberry cheesecake salad?
The base of our cheesecake mixture starts with cream cheese. Cream cheese brings amazing flavor and creaminess to this salad. For best results, you’ll want to make sure your cream cheese is softened before using. To our cream cheese, we add keto powdered sugar. I used the Swerve brand for my sugar. It contains zero calories and zero net carbs. It’s also delicious and similar in its sweetness level to regular sugar. We then add heavy whipping cream, vanilla extract, and salt to our mixture. Heavy whipping cream adds incredible richness and creaminess to our salad. I love the addition of vanilla and salt as they add their own flavor and seem to enhance the other flavors in this dish. I used an electric hand mixer to combine all these ingredients; but when you add your strawberries, you’ll want to use a soft spatula and gently fold them in.
If you want to add even more decadence to this keto strawberry cheesecake salad, you can top it with some homemade keto whipped cream!
It’s incredibly easy to make homemade keto whipped cream. Once I started making my own whipped cream, I seriously asked myself why I ever used anything else! For the best results, you’ll want to chill your mixing bowl and beaters in the freezer for 15-20 minutes prior to using. Then, to your chilled bowl, you’ll add 1 cup of heavy whipping cream with 2 tablespoons of keto powdered sugar and 1 teaspoon of vanilla extract. You’ll want to beat this until heavy peaks form. This means when you remove the beaters, they form peaks which completely hold their shape. This recipe can also easily be doubled. If you’d like, you can also play around with this recipe and try different extracts. One of the great things about making your own whipped cream is that if you want it sweeter, you can simply add more powdered sugar!

Can the strawberries be frozen?
Lisa
Hi Michelle. I always use fresh strawberries for this salad. If you use frozen, you’ll want to thaw and drain all the excess liquid so your salad doesn’t turn out watery.
