Strawberries are a great keto food choice! They are a low-calorie food and are relatively low in carbs. One cup of strawberries contains approximately 7-8 net grams of carbs. In comparison, one cup of blackberries contains about 6 net grams and one cup of raspberries contains about 7. Blueberries tip the scale with one cup containing about 17-18 net grams of carbs. I’ll still eat blueberries, but I’m careful with the amounts I eat.😉Strawberries are delicious eaten raw, just as they are. They can also be sliced and tossed with some keto sugar to make a great topping for keto desserts. They’re also great cooked or roasted and used to make jams, jellies, and sauces. For this dessert, we’re pureeing our strawberries in a blender and using the puree to help create a delightfully delicious and pretty dish!
How do I make the whipped cream and strawberry puree to make this keto strawberry fool?
This is an incredibly quick and easy dessert to make. First, we’re making homemade whipped cream. I recommend chilling your mixing bowl and beaters for 15-20 minutes before using. Then to the chilled bowl, add your heavy whipping cream, vanilla, and salt. You’ll want to beat this until stiff peaks form. Stiff peaks mean when you remove your beaters, they form peaks which completely hold their shape. Set your whipped cream aside while you make the strawberry puree. To make the puree, you’ll add your chopped strawberries, keto granulated sugar, and lemon juice to a blender. Then simply blend the mixture until it’s smooth and pureed. At this point, you’ll want to reserve 1 cup of the strawberry puree to use for making the pretty layers in this dessert. Add the remaining puree to the whipped cream, stir to combine, and you’re ready to layer this dessert!
How do I make the layers for this keto strawberry fool?
I like to serve this dessert in parfait glasses, but it’s also pretty served in glass bowls or even in stemless wine glasses or in cute little mason jars. I’ll tell you how I layered mine, but you can change it up and layer it any way you’d like! We reserve about one cup of strawberry puree which gives us 16 tablespoons. I make this into 8 desserts. So, I start with adding about 1 tablespoon to each glass, then top with some of the whipped cream mixture. I then top the whipped cream with 1 more tablespoon of puree and some more whipped cream. The layers swirl together a bit which makes this dessert even more beautiful! If you’d like you can also slice up a few extra strawberries and top your dessert with them. Ingredients
- 2 cups heavy whipping cream
- 1 teaspoon vanilla
- Pinch of salt
- 16 ounces strawberries, hulled and chopped
- ⅔ cup granulated sugar substitute (Swerve)
- 1 tablespoon lemon juice
Instructions
1. Chill a large mixing bowl and beaters 15-20 minutes before using.
2. To chilled bowl, add heavy whipping cream, vanilla, and salt. Beat until stiff peaks form. Set aside.
3. To a blender, add strawberries, sugar, and lemon juice. Blend until smooth.
4. Reserve 1 cup of strawberry puree.
5. Add remaining strawberry puree to whipped cream and stir to combine.
6. To 8 serving bowls or parfait glasses, layer reserved strawberry puree with whipped cream mixture.
7. To each bowl or glass, start with adding 1 tablespoon strawberry puree, top with a layer of whipped cream, top with 1 tablespoon of strawberry puree, and finish with a layer of whipped cream.
