I had so much fun making this keto strawberry jello fluff. It’s been a while since I did anything with jello, and I knew I wanted to combine it with ingredients to have it come out as a rich and decadent dish. It did that and more! I also topped our strawberry fluff with some homemade keto whipped cream!
Let’s talk about our gelatin mix!
One of the reasons I was excited to work with flavored gelatin is that I finally found a mix I was ok using. I don’t like the added ingredients in most packaged sugar free gelatin mixes. Some common ones include aspartame, maltodextrin, sucralose, and artificial flavoring and coloring. For my gelatin, I used the brand Simply Delish. It does contain carrageenan, which is an additive used to thicken, emulsify, and preserve foods. Some say it can cause inflammation; but I pick my battles with keto ingredients, and decided I was fine using this in moderation. This brand uses erythritol and stevia extract for sweeteners and adds natural colors and flavors. I’m a firm believer everyone needs to decide exactly how strict they want their diet to be. So you can absolutely use your favorite sugar free gelatin brand or can even make your own if you’d like.😊
Is this keto strawberry jello fluff difficult to make?
This sweet dish is incredibly easy to make. The instructions for the Simply Delish Jel are to add the mix and cold water to a bowl, stir until the mix is completely dissolved, then add the boiling water. If you use a different brand, you’ll want to follow their directions for making it. We then combine softened cream cheese with keto powdered sugar. I used the Swerve brand for my powdered sugar as it contains zero calories and zero net carbs and is delicious! You’ll beat this mixture for a minute or so until it is nice and creamy. Then we add the heavy whipping cream and vanilla and beat until the mixture is smooth and thickened. This will take a few minutes. Then simply add the gelatin and beat for about a minute to combine all the ingredients. Refrigerate for an hour or two or overnight before serving.
How can I serve this keto strawberry jello fluff?
This dish can be served as a dessert, a snack, or even a breakfast option. It’s awesome served all on its own, but if you’d like, you could top it with some homemade keto whipped cream. If you’ve never made your own whipped cream, you’re in for a real treat. It’s far superior in taste and creaminess to anything else! I recommend chilling your mixing bowl and beaters for 15-20 minutes before using. Then to the chilled bowl, add 1 cup of heavy whipping cream with 2 tablespoons of keto powdered sugar and 1 teaspoon of vanilla. You’ll then simply beat the mixture until stiff peaks form. Stiff peaks mean when you remove the beaters, they form peaks which completely hold their shape. You can also easily double this recipe for homemade whipped cream and can even add more powdered sugar if you’d like a sweeter whipped cream.

Ingredients
- 1 (.7 ounce) box Simply Delish Strawberry Jel
- ½ cup cold water
- 1½ cups boiling water
- 8 ounces cream cheese, softened
- 2 tablespoons powdered sugar substitute (Swerve)
- 1½ cups heavy whipping cream
- 1 teaspoon vanilla
- Optional: top with keto whipped cream
Instructions
1. In a small bowl, stir strawberry jel powder into cold water until dissolved. Stir in boiling water. Set aside.
2. In a large mixing bowl, add cream cheese and powdered sugar. Beat until smooth.
3. Add heavy whipping cream and vanilla. Beat until mixture is smooth and thickened, 4-5 minutes.
4. Add jello mixture and beat for 1 minute or until smooth and combined.
5. Chill for 2-3 hours or overnight before serving.
6. Top with keto whipped cream if desired.
