This keto strawberry mousse is simply divine! In just 15 minutes you can have this creamy and delicious dessert ready to serve! Enjoy!
I love making quick, easy, and delicious desserts for my family and this keto strawberry mousse is all three! My husband especially loves strawberries, so I try to come up with new recipes I know he’ll enjoy! And although I call this a dessert, he has been known to eat my strawberry desserts for breakfast too!🍓
Are strawberries keto?
When following a low carb keto plan, many fruits are off limits due to their carb count. The great news is that berries, eaten in moderation, are a great keto option. Blackberries, raspberries, and strawberries are similar in their carb counts. Blueberries contain about twice the amount of carbs than the others, but can still be eaten in limited quantities. One cup of strawberries contains about 7-8 net grams of carbs. Strawberries provide us with folate, magnesium, manganese, potassium, and vitamins A and C. They’re also a good source of antioxidants and fiber. So yes, in moderation, enjoy your strawberries!
How do I make this keto strawberry mousse?
This is an incredibly quick and easy dish to make. You’ll want to make sure your cream cheese is softened to help achieve the creamiest mousse. I used the Swerve brand of powdered sugar. This is a zero calorie and zero net carb sugar which tastes amazing. I love to add vanilla and a touch of salt to my mousse as they add great flavor. You will have some pieces of strawberry in your mousse. If you want smaller pieces, you can either dice your strawberries before adding to the mousse or you can beat your mixture longer. Last, you simply add heavy whipping cream and beat until your mousse thickens. This is a one bowl dessert that couldn’t be easier to make!
How do I make keto whipped cream to top my keto strawberry mousse with?
Once I started making my own whipped cream, I couldn’t believe I ever used anything else. It’s incredibly easy and incredibly delicious. And when you make your own, you know exactly what’s in it and can avoid unhealthy added ingredients. First, you’ll want to chill both your bowl and beaters in the freezer for about 15 minutes before using. Also, don’t take your heavy whipping cream out of the refrigerator until you’re ready to use it. For the best results, you want everything as cold as possible. When your bowl and beaters are chilled, you’ll simply add 1 cup of heavy whipping cream, 2 tablespoons of keto powdered sugar, and 1 teaspoon of vanilla to the bowl. Then beat the mixture until stiff peaks form. You can easily double this recipe as well. If you’d like, you can also substitute different extract flavors in place of the vanilla.

Helpful Hints:
*For the best results, you’ll want to make sure your cream cheese is softened before beating.
*If you’d prefer smaller pieces of strawberries, you can chop them into smaller pieces before adding or you can beat your mousse longer to break up the strawberry pieces.
