The star of the show is, of course, strawberries. But they do need a little help to make this sauce complete! I used fresh strawberries, and simply hulled and chopped them. To our strawberries, we add some keto powdered sugar. I used the Swerve brand of sugar. It contains zero calories and zero net carbs. And it’s delicious! You can use any keto powdered sugar you’d like. Some are sweeter than others, so you may have to adjust amounts accordingly. Swerve is a one-to-one substitution for regular sugar as its sweetness level is quite comparable to regular sugar. A little lemon juice and vanilla give our sauce awesome flavor while keeping the carb count low. I love using fresh lemon juice and almost always have a lemon or two on hand. You can use bottled lemon juice if you’d like.

This is a quick and easy recipe, but I do have some tips for making it. First, every stove is different. I heated my sauce over medium high heat and stirred it frequently. If your sauce is bubbling a lot, you can turn the heat down a little. You just want the strawberries to soften and break down while they simmer. I didn’t want big pieces of strawberries in my sauce, so I smooshed them up by using a spoon to press them onto the sides and bottom of the pan. If you’d like bigger pieces, you can skip this step. You’ll want to add the vanilla last to ensure it keeps its flavor!

You have some great options for serving this sauce. You can serve it warm or cold. It works great as a topping for keto pancakes and waffles. Ingredients
- 10 ounces strawberries, hulled and chopped
- ¼ cup powdered sugar substitute (Swerve)
- 1 tablespoon lemon juice
- ½ teaspoon vanilla
Instructions
1. In a medium saucepan add strawberries, powdered sugar, and lemon juice. Stir to combine.
2. Over medium high heat, simmer for 10 minutes. Stir frequently, smashing strawberries against sides and bottom of pan.
3. Remove from heat. Stir in vanilla.
