I grew up on a dairy farm in Wisconsin. And even though we had our own beef and ate burgers, roasts, and steaks, my mom also made some super delicious casseroles. I love taking high carb dishes and making them keto, and I love doing the same with casseroles. A casserole is basically a dish cooked in the oven in a baking dish or a baking pan. Some casseroles are made by simply combining all the ingredients in the dish and then baking them together. Others are made by first cooking some of the ingredients, then combining them with other ingredients and baking them together, sometimes layering ingredients. You can make casseroles by combining any number of meats, vegetables, eggs, cheeses, and sauces. I think of casseroles as warm and inviting comfort food dishes and hope you’ll enjoy this keto stuffed pepper casserole as much as we do!
Is this keto stuffed pepper casserole difficult to make?
This is an easy casserole to make and comes together quickly with just 25 minutes of prep time. I like to prep my veggies and get all my other ingredients ready while I’m cooking my ground beef. Often, I’ll cook my peppers and onions with the ground meat; but I cook them separately for this dish because of the amounts we’re using. You can use fresh or frozen riced cauliflower for this casserole. In order to ensure the tomato paste gets evenly distributed in the casserole, I like to whisk or stir it with my broth and tamari until it’s completely dissolved before adding to the rest of the ingredients. You can use mozzarella or any good melting cheese or combination of cheeses for your casserole. Because it melts so much better and there are no added ingredients, I buy blocks of cheese and shred my own.
What can I serve with this keto stuffed pepper casserole?
This is a filling dish which can be served as a meal in itself. A great option is to serve it with a green salad using your favorite lettuce and toppings or using spinach. Coleslaw or a vegetable salad would also make a great addition to this casserole. You can also serve this casserole with some keto biscuits, cornbread, or English muffins. Any low carb cooked vegetable would pair nicely with this dish. Some good choices include asparagus, broccoli, Brussels sprouts, green beans, spinach, or even a cooked cabbage dish. Keto Stuffed Pepper Casserole
This keto stuffed pepper casserole combines the ingredients of stuffed peppers and turns them into a comfort food casserole. Enjoy!
Ingredients
- Avocado oil spray
- 1½ pounds ground beef
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 medium green pepper, diced
- 1 medium red pepper, diced
- ⅓ cup diced onion
- 1 teaspoon Italian seasoning
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- 1 (14.5 ounce) can petite diced tomatoes, drained
- 2 cups cooked cauliflower rice
- ½ cup beef broth
- 1 tablespoon tamari
- 1 tablespoon tomato paste
- 2 cups shredded mozzarella cheese
Instructions
1. Pre-heat oven to 350 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. In a large skillet over medium high heat, cook ground beef with salt and pepper until no longer pink, breaking it up into small pieces as it cooks.
3. Drain all but 2 tablespoons of grease from skillet. Remove ground beef to a plate.
4. Add peppers, onions, Italian seasoning, smoked paprika, and garlic powder to reserved grease. Saute until vegetables start to soften, 5-7 minutes.
5. Add ground beef, diced tomatoes, and cauliflower rice to skillet.
6. In a small bowl or measuring cup, add beef broth, tamari, and tomato paste. Stir or whisk until tomato paste is dissolved. Add to skillet. Stir to combine. Simmer for 5 minutes.
7. Add mixture to prepared baking dish. Top evenly with mozzarella cheese.
8. Bake for 30-35 minutes, or until heated through. Let casserole set for 5 minutes before serving.
