I used a fully cooked bone-in ham for this dish. At times I use a shank ham, but for this dish, I used a butt portion ham. Both options are great choices, but the nutritional content will differ in the amount of fat and protein depending on which you use. A shank ham contains approximately the same percentage of fat and protein per serving, while a butt portion contains twice as much protein as it does fat. Since our ham is already cooked, we’re simply warming it up in the oven. Some recipes call for scoring the ham at the very start while others call for scoring it after it’s cooked for a couple of hours and just before glazing it. When I make a clove studded ham, I score it at the start; otherwise I just do it right before glazing the ham.
How do I make the sweet bourbon glaze for this ham?
The glaze for this ham is amazingly delicious and is quite easy to make! I start making my glaze after my ham has been cooking for about 1½ hours. To make the glaze, you’ll simply combine all the glaze ingredients in a small saucepan. After stirring or whisking to combine, you’ll heat your sauce over medium high heat until the mixture starts to boil. Then decrease your heat to medium and simmer for 10-15 minutes and stir or whisk occasionally. Your sauce will not thicken much while cooking, but the flavors will meld together quite nicely while the sauce simmers. I like to use a silicon brush to evenly brush the glaze over the ham, but you can simply pour the glaze evenly over the ham if you’d like. I then like to baste the ham a couple of times while the ham finishes baking.

You have some awesome low carb options for serving this ham. You can serve this ham, sliced or cut into pieces, just as is! I like to serve my ham with a side of extra glaze from the bottom of the baking pan. This ham is easy enough to serve for everyday meals, yet elegant enough to serve for holiday and special occasion dinners. It can be served with cooked low carb vegetables or with your favorite mashed dishes. Some of our favorites include mashed cauliflower, mashed kohlrabi, and mashed turnips and rutabagas. Keto Sweet Bourbon Glazed Ham
This keto sweet bourbon glazed ham is amazingly delicious and contains the perfect balance of sweet and savory flavors!
Ingredients
- 8-11 pound bone-in fully cooked ham
- 1 cup brown sugar substitute (Swerve)
- ½ cup bourbon
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon cinnamon
- 1 teaspoon garlic powder
- ½ teaspoon ground ginger
Instructions
1. Pre-heat oven to 325 degrees.
2. Place ham, cut side down, into a large baking pan. Cover ham tightly with foil.
3. Bake for 2 hours or until temperature of ham reaches 130 degrees.
4. Start glaze after ham has been baking for 1½ hours. Add all glaze ingredients to a small saucepan. Stir to combine.
5. Bring to a boil over medium high heat. Decrease heat to medium and simmer for 15-20 minutes, stirring occasionally.
6. When ham reaches 130 degrees, remove from oven and remove foil. Carefully drain and discard ham drippings from baking pan.
7. Using a sharp knife, score ham diagonally. Then score in the opposite direction creating a criss cross pattern.
8. Pour or brush glaze evenly over ham. Bake, uncovered, for 30 minutes, or until ham reaches 140 degrees. Baste once or twice during this time.
9. Slice ham and serve with extra glaze from bottom of baking pan if desired.
