I used homemade taco seasoning for my meatloaf. I tried quite a few combinations before I got to the perfect mix. My kids were also my taste testers, and this combination got the unanimous thumbs up by all of us. We combine chili powder, cumin, garlic powder, paprika, salt, onion powder, pepper, and oregano for our seasoning mix. I use regular chili powder, but if you’d like, you could substitute with any chili powder; and there are quite a few of them to choose from. Some options include ancho, arbol, Chimayo, chipotle, dark, and guajillo chili powder. If you’d like, you could also substitute smoked paprika for regular paprika for a fun change up. If you’d like to add a little more heat, you could even add some ground cayenne pepper to your mix. Of course, you can also use your favorite taco seasoning mix for your meatloaf.
What other ingredients go into this keto taco meatloaf?
I used 93% lean ground beef for my meatloaf. A 90% lean ground beef would also work well. You could also use a combination of ground beef and ground pork, but you will likely end up with a little more grease in your drippings. If you choose to use ground turkey, I’d recommend using a combination of ground turkey and ground beef so you won’t end up with a dry meatloaf. To keep our meatloaf juicy while also ensuring it holds together, we add a combination of salsa, almond flour, and eggs. Depending on your taste preference, you can use regular, mild, or hot salsa for your meatloaf. I’ve used crusted cheese whisps, pork rinds, and Parmesan cheese in my meatloaf, but this was my first time using almond flour. I was a little skeptical, but it worked great, and we couldn’t taste the almond flour at all!
How can I serve this keto taco meatloaf?
You have some awesome low carb options for serving your meatloaf! If you’d like, you could top your meatloaf with some shredded cheese and bake it a few minutes longer until the cheese is melted. I would recommend buying a block of cheese and shredding it yourself since it melts so much better than pre-shredded cheese. You can also serve your meatloaf topped with some additional salsa or with your favorite taco toppings. Some good options include diced tomatoes, guacamole, sliced black olives, or sour cream. You can serve this keto taco meatloaf with a side salad or even with a keto soup. A side of keto biscuits, cornbread, English muffins, or crackers would also be a great addition. If you’d like to add a mashed dish to your meal, some great options include mashed cauliflower, mashed kohlrabi, or mashed turnips.

Keto Taco Meatloaf

Ingredients
For the taco seasoning:
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon pepper
- ¼ teaspoon oregano
For the meatloaf:
- Avocado oil spray
- 2 pounds ground beef
- 1 cup salsa, divided
- ¼ cup almond flour
- 2 eggs, lightly beaten
- Optional: top with additional salsa if desired
Instructions
For the taco seasoning:
1. In a small mixing bowl, add all ingredients. Stir to combine. Set aside.
For the meatloaf.:
1. Pre-heat oven to 350 degrees. Line a 9x5 inch loaf pan with aluminum foil. Lightly spray foil with avocado oil. Set aside.
2. In a large mixing bowl, add ground beef, taco seasoning, ½ cup salsa, almond flour, and eggs. Use your hands to combine all ingredients. Don’t over work mixture.
3. Press meatloaf mixture into prepared loaf pan. Top evenly with remaining ½ cup salsa.
4. Cover with foil. Bake for 50 minutes. Remove foil and bake for 10-20 minutes, or until internal temperature reaches 160 degrees.
5. When serving, top with additional salsa if desired.
