I have a friend who is gluten and dairy free. She told me that she has trouble finding cheese she likes because she doesn’t like the taste of nutritional yeast. I had a recipe for a paleo cheese which I had made before and was impressed by. It contained nutritional yeast, but the other ingredients worked so well with it, I didn’t think the taste of the nutritional yeast overpowered the recipe. It also melted perfectly. One of the ingredients was tahini. Fast forward to the end of the story. I made a batch of the cheese for her. She loved it. I had some extra tahini to use up and created this keto tahini cucumber salad recipe! I hope you enjoy it!
What is tahini?
Tahini is a paste made from roasted sesame seeds. I have made tahini from scratch and have purchased store bought tahini. Making tahini is pretty easy. You simply toast sesame seeds in a pan on the stovetop and crush them by hand or use a food processor. You then add a little oil to make the mixture into a paste. It was fun to make my own; but I like Trader Joe’s tahini and find it similar to my homemade version. And since it’s much easier to buy than to make, I usually use the store-bought one!

There are a few things you can do to ensure this salad comes out perfectly! First, you want to remove as much moisture as possible from the cucumbers so that you don’t end up with a watery salad. Sprinkle the cucumbers with salt and let set in a colander for about 30 minutes. Toss a few times during this 30 minute time frame. This is called “sweating” the cucumbers as the salt draws moisture out of the cucumbers. Then use a paper towel to dry the cucumbers even further. Second, use fresh ingredients. Fresh dill makes this recipe! I try to always have fresh lemons on hand as they are easy to use and taste so much better than store-bought lemon juice. Third, since the tahini is thick, it is important to thin the sauce out with some water. This will give you the perfect dressing consistency for the salad!

Keto Tahini Cucumber Salad

Ingredients
For the salad:
- 3 cucumbers, sliced (and halved if using large cucumbers)
- 1 teaspoon salt
- 3 tablespoons red onion, finely diced
For the dressing:
- ½ cup sour cream
- 2 tablespoons heavy whipping cream
- 2 tablespoons lemon juice
- 2 tablespoons tahini
- 2 tablespoons water
- 2 tablespoons fresh chopped dill
- 2 teaspoons granulated sugar substitute (Swerve)
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
For the salad:
1. Place the sliced cucumbers in a colander. Sprinkle cucumbers with 1 teaspoon salt. Place colander in the sink. Let cucumbers set for 30 minutes, tossing every 5-10 minutes.
2. Once cucumbers have set for 30 minutes, dry further with a paper towel to get them as dry as possible. Place cucumbers in a large mixing bowl. Add red onions.
For the dressing:
1. In a small mixing bowl, add all dressing ingredients. Stir to combine.
2. Pour dressing over cucumbers. Toss to combine.
3. Serve immediately or refrigerate, in a covered container, until ready to serve.
