You can use all white meat, all dark meat, or a combination for your salad. Another great and quick option is to use a rotisserie chicken. For my salad, I combined some diced red peppers and a couple of scallions. You can use any color bell pepper you’d like. You can also substitute 2 or 3 tablespoons of diced yellow onion for the scallions if you’d prefer. I chose to not add any chopped celery to this salad; but if you want more crunch, you could always add some.

I’d highly recommend using fresh tarragon if possible. If you can’t find fresh, you can substitute 2 teaspoons of dried tarragon for the 2 tablespoons of fresh. I used the Swerve brand of keto brown sugar. It contains zero calories and zero net carbs and is delicious! For our seasonings, we combine garlic powder, paprika, salt, and pepper. I always suggest you taste your salads and add more salt and pepper if you’d like.

- 4 cups cooked and chopped chicken
- 3 tablespoons diced red pepper
- 2 scallions, diced
- ½ cup keto mayonnaise
- ¼ cup sour cream
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 2 tablespoons chopped fresh tarragon
- 1 tablespoon brown sugar substitute (Swerve)
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika
- ¼ teaspoon salt
