What is Thai food?
That is a loaded question and varies greatly depending on which region in Thailand the dish comes from. Thai dishes come together to create the perfect balance of salty, sour, spicy, and sweet flavors. Great care is taken to ensure dishes have awesome color, taste, and texture. Another important aspect of Thai cooking is in the value placed on the presentation of foods. I think my favorite thing about Thai food is the integral part it plays in both family meals and in parties and get togethers. The food is appreciated and savored as cooking and sharing food with others is a way to show care and love. This shines through in Thai dishes! If you haven’t, I think you’d enjoy a quick research of Thai dishes, ingredients, cooking methods, and serving practices.😊
Let’s talk about the awesome sauce for these keto Thai coconut curry drumsticks!
We start with coconut cream which gives this sauce richness and a sweetness. The addition of lime juice provides a splash of acidity. Then the red curry paste brings a warm spicy taste and a hint of sweetness. Then we add some garlic chili sauce which is garlicy and hot! You don’t need a lot of this to add tremendous flavor and spice. Freshly grated ginger, minced garlic, and chopped basil bring both color, taste, and texture to our sauce. Then the brown sugar adds just the right amount of sweetness to balance with the spice! A little salt and pepper complete the sauce.
Do you have any tips for making these keto Thai coconut curry drumsticks?
This is a fun, quick, and easy recipe. But there are some substitutions and adjustments you can make for your convenience and taste preferences. Bone-in skin on chicken thighs could be used in this dish. You may have to increase the baking time if you use thighs. I highly recommend using fresh lime juice, ginger, and basil if you can. But in a pinch, you can use bottled lime juice. If you choose to use dried ginger or basil, just remember you will use less dried herbs and spices than when using fresh. You’ll need approximately one-third of the amount of dried compared to fresh. If you’d like, you can increase the spice level of your sauce by adding more Thai red curry paste and garlic chili sauce. Taste your sauce and then you can also add more salt if you’d prefer.

Helpful Hints:
*If you’d like, you can increase the spice level in this dish by adding more Thai red curry paste and garlic chili sauce.
*For my drumsticks, I prefer to bake them until the internal temperature is 175 degrees or high because of how tender this makes them.
