For our salad, we start with a package of coleslaw mix. You can use any mix you’d like, just make sure you’re not buying a coleslaw mix with dressing, since the dressing will likely be high in carbs. If you’d like, you can always make your own homemade coleslaw mix. To our coleslaw mix, we add some diced red pepper and diced onion. I like the sweetness of red peppers, but you could use any color bell pepper for your salad. For the tuna, since we are adding a creamy dressing, you’ll want to use tuna packed in water and not tuna packed in oil. You can use regular or albacore tuna for this coleslaw. You’ll want to make sure you drain your tuna well before adding it to the coleslaw.

There are a few things we do with our dressing to make it wonderfully rich and delicious while keeping it low carb and keto. First, we use keto mayonnaise. I like the Chosen Foods brand avocado oil mayonnaise, but you can use any sugar free keto mayo you’d prefer. Sour cream helps to make our dressing creamy and gives it awesome flavor. It’s also naturally low carb. You will want to use full fat sour cream as it is lower in carbs. Mustard adds a tang to our dressing and is also low in carbs. We then add a little keto sugar to help balance our flavors. I used the Swerve brand. It contains zero calories and zero net grams of carbs. Lemon juice, salt, and pepper give our dressing amazing flavor and are all low in carbs. All these ingredients make for an awesome tasting low carb dressing!

Because this coleslaw contains tuna, it’s more filling that regular coleslaw. You could even serve this, as is, for a light meal. Ingredients
- 16 ounce package coleslaw mix
- ¼ cup diced red pepper
- 3 tablespoons diced onion
- 2 (5 ounce) cans tuna, drained
- ½ cup keto mayonnaise
- ¼ cup sour cream
- 1 teaspoon Dijon mustard
- 1 teaspoon granulated sugar substitute (Swerve)
- 1 teaspoon lemon juice
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. In a large mixing bowl, add coleslaw mix. Cut or tear up any large pieces.
2. Add red pepper, onion, and tuna. Stir to combine ingredients.
