I have a variety of great keto pasta substitutions I use, but the one I used to make this dish is the newest I’ve found. It’s also the closest in texture to regular pasta of anything I’ve tried. The pasta is from the brand Kaizen and it’s quite unique as this pasta is made primarily from the flour from lupini beans, called lupini or lupin flour. Lupini beans are low in carbs and high in both protein and fiber. They’re also a source of iron and potassium. It only takes a few minutes to cook this pasta, about 5-6 minutes. Then once cooked, you will want to drain and rinse the pasta. I used Kaisen’s lumache pasta, also known as shellbows, due to its fun shape. Kaisen also makes other shapes such as cavatappi, fusilli, radiatori, and ziti. Any of these pastas could be used to make this dish!

What other ingredients go into this keto Tuscan sausage pasta?
The meat we use for this dish is Italian sausage. I used mild Italian sausage links, removed the casings, then crumbled and cooked the sausage. Alternately, you can use ground sausage and can use mild or hot sausage depending on your taste preference. We add some garlic cloves to give our dish even more flavor. Then to make the sauce we add heavy whipping cream, chicken broth, fresh grated Parmesan cheese, oregano, salt, and pepper. The heavy whipping cream and Parmesan help to thicken the sauce while also keeping it low in carbs. Once the cheese is melted, we add the cooked, drained, and rinsed pasta to the skillet along with the spinach and diced tomatoes and cook until the spinach starts to wilt and the mixture is heated through. If you’d like, you can substitute ¼-½ cup of chopped sun-dried tomatoes in place of the fresh tomatoes.

What are some ways I can serve this keto Tuscan sausage pasta?
You have some great options for serving this keto pasta dish. A great start to any pasta meal is a salad, and you could serve a Caesar salad or garden salad with it. One of my favorite things to do is to chop up iceberg or Romaine lettuce then serve it with some of my family’s favorite salad toppings. These include diced tomatoes, fried and crumbled bacon, hard boiled eggs, and shredded cheese. Some other super keto toppings you might like include crumbled blue cheese, cucumbers, feta cheese, olives, pecans, sliced avocados, sunflower seeds, and walnuts. You can serve this pasta with a side of cooked vegetables. Some great low carb options include asparagus, broccoli, cauliflower, and green beans. You can also make a cabbage side dish or can serve your pasta with boiled radishes or roasted radishes.

Keto Tuscan Sausage Pasta
Keto Tuscan sausage pasta is a 30 minute meal that is incredibly creamy, flavorful, and comforting! Enjoy!
Ingredients
- 1 (8 ounce) box Kaizen pasta
- 12 ounces Italian sausage
- 3 garlic cloves, minced
- 1 cup heavy whipping cream
- ½ cup chicken broth
- ½ cup fresh grated Parmesan cheese
- 1 teaspoon oregano
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 2 cups roughly chopped spinach
- ½ cup diced tomatoes
Instructions
1. Bring a large pot of water to a boil and cook pasta according to package directions.
2. While pasta is cooking, saute sausage (remove casings if using sausage links) in a large skillet over medium high heat. Break sausage apart as it cooks and cook until no longer pink.
3. Add garlic during last two minutes of cooking.
4. Add heavy whipping cream, chicken broth, Parmesan, oregano, salt, and pepper. Stir to combine and cook 3-5 minutes until sauce starts to thicken.
5. Add spinach, diced tomatoes, and cooked pasta. Stir to combine and cook until spinach is wilted and mixture is heated through.
