My family loves this keto vanilla cheesecake mousse! It comes together quickly, so you can have this special sweet treat any time you’d like. It’s great just as it is, but I like to serve mine with homemade keto whipped cream and then topped with keto grated chocolate!

We then add a package of keto vanilla instant pudding mix. There are a few brands of sugar free pudding mixes available, but I prefer the Simply Delish brand. I think it has the cleanest ingredients and it truly is delicious! It’s also fairly low in carbs. We then add heavy whipping cream and vanilla. You can serve this mousse just as it is, but I love to top mine with keto whipped cream and with some keto grated chocolate. You can use any sugar free keto chocolate you’d like. I find one of easiest ways is to use keto chocolate chips and use a small grater to grate them. My favorite brands are Lily’s and Bake Believe.

This keto mousse is incredibly quick and easy to make. You’ll want to use a large mixing bowl to make this mousse. You’ll start with using an electric mixer to beat the cream cheese with the pudding mix until they’re combined. I used a hand mixer to make my mousse. To the cream cheese and pudding, you’ll then add the heavy whipping cream and vanilla. One of the great things about this mousse is that you don’t need to beat the heavy whipping cream separately. Once you add the heavy whipping cream and vanilla, you’ll want to beat the mixture until it’s smooth and until it thickens. Another great thing about this mousse is that you can serve it immediately or you can make it a day or two ahead of time and refrigerate it until you’re ready to serve it.
How do I make homemade keto whipped cream to top my keto vanilla cheesecake mousse with?
It is incredibly easy to make homemade keto whipped cream; and once I started making homemade, I wondered why I ever used anything else! It’s superior in its taste and texture to all others. I recommend placing your mixing bowl and beaters in the freezer for 15-20 minutes before using. Then to your chilled bowl, you’ll add 1 cup of heavy whipping cream, 2 tablespoons of keto powdered sugar, and 1 teaspoon of vanilla. You’ll beat this mixture until stiff peaks form. Stiff peaks mean when you remove your beaters, they form peaks which completely hold their shape. You can also easily double this recipe. Also, you can give your whipped cream a taste and add even more powdered sugar if you’d like. If you’re adventurous, you can also substitute with other extract flavors in place of the vanilla.
