Let’s talk about ricotta cheese!
Ricotta cheese is a soft fresh Italian cheese. Although ricotta can be made from sheep, goats, and water buffalo, most of the ricotta cheese you’ll find at your local grocery stores is made from cow’s milk. Ricotta cheese is classified as a fresh cheese because it hasn’t been aged for any significant amount of time. It also has a very high moisture content, which is why for many recipes, you’ll see it calls for draining or straining the ricotta. Ricotta is soft and creamy in texture. Taste wise, it’s mild and has an incredibly fresh milk flavor with just a hint of nutty flavor as well. One of the unique things about ricotta cheese is that it works great in both sweet and savory dishes. To create the richest and creamiest texture for this dessert, I recommend using whole milk ricotta cheese.

What other ingredients go into this keto vanilla ricotta cream?
To our ricotta cheese, we add just a few simple but delicious ingredients to make this dish. For sweetener, I used the Swerve brand of powdered sugar. This sweetener is a zero calorie and zero net carb sweetener that is incredibly similar in its sweetness level to regular sugar. Alternatively, you can use your favorite keto sugar but may have to adjust the amount added as some brands have different sweetness levels. We then add vanilla, ground cinnamon, and a pinch of salt. I love the vanilla flavor that comes with the addition of vanilla extract. If you’d like, you could substitute with almond extract or could add equal amounts of vanilla and almond extract to make your dessert. The addition of cinnamon to this dish adds a warm and comforting flavor that I love. You could also add some nutmeg if you’d like.

What are some ways I can serve this keto vanilla ricotta cream?
You can serve this ricotta cream as a dessert or snack option. And, if you’re one of those people who likes sweets for breakfast, go for it!😂This dish is wonderful served just as is. Another great option is to sprinkle some ground cinnamon or nutmeg over it. You could also top this dish with some keto whipped cream. To make your whipped cream, you’ll want to chill your mixing bowl and beaters in the freezer for 15 minutes or so before using. Then to your chilled bowl, you’ll add 1 cup of heavy whipping cream, 2 tablespoons of keto powdered sugar, and 1 teaspoon of vanilla. You can add more sugar if you’d like. You’ll want to beat your mixture until if forms stiff peaks. Stiff peaks means when you remove your beaters, they form peaks which completely hold their shape.
