What kind of peanut butter should I use for this keto white chocolate peanut butter fudge!
I like my peanut butter to contain only peanuts or peanuts and salt. There are a variety of natural peanut butter brands that are low carb and keto. Just make sure to read your nutrition labels when buying peanut butter so you know exactly what’s in it. Make sure there are no added sugars or oils that you don’t want in your peanut butter. You can also substitute keto almond butter in this recipe if you’d like.
Let’s talk about the other ingredients in this delicious fudge!
I chose to use the white chocolate chips from the brand Bake Believe. I think they taste awesome and they contain zero net carbs. You can use any keto white chocolate you’d like. The vanilla for this fudge enhances the flavor of the fudge. I have always been partial to Watkins vanilla. It is what my grandma used which brings back some very special memories for me. I also think it adds a great depth of flavor to recipes. Next, I added a touch of salt because my peanut butter didn’t have any added salt. You can omit the salt if your peanut butter contains salt.
Do you have any advice for making this keto white chocolate peanut butter fudge?
This is a fun, quick, and easy fudge recipe; but there are a few things you can do to ensure it comes out perfect every time! First, I suggest lining your pan with parchment paper to cover the bottom and up the sides of your pan. This allows you to lift the entire piece of fudge out of the pan. With doing this, you can easily cut your fudge without scratching your pan and it makes clean up a breeze! Next, microwave your peanut butter and chips at 30 second intervals and stir after each interval. When the chips are melted and the mixture is smooth, you are ready to add your vanilla and salt. Last, make sure you freeze your fudge for at least an hour to allow it to set before serving.
