For this recipe, I chose to use Bake Believe White Baking Chips. These chips contain zero net carbs and are unbelievably delicious! This recipe uses just a touch of coconut oil. It’s good to know the differences between refined and unrefined coconut oil. Refined oil is more processed than unrefined. This results in refined coconut oil being more neutral tasting while unrefined has a stronger coconut taste. I prefer the unrefined coconut oil, especially when using in recipes in which I want a little hint of coconut flavor to come through. I love to add a touch of salt to many of my dessert recipes. The coarse salt sprinkled over these clusters is the extra step I find that takes them to the next level! You can skip this step or can make half with and half without if you’d like.

You’ll love these quick, easy, and decadent keto white macadamia clusters! They’re easy enough to make any day of the week, yet elegant enough to make for holidays and special occasions!
Ingredients
- 1½ cups macadamia nuts
- 1½ cups keto white chocolate chips
- 1 tablespoon coconut oil
- Coarse salt, optional topping
Instructions
1. Prepare two 13x9 inch pans by lining bottom with wax paper. Set aside.
2. Heat a large skillet over medium high heat. Add macadamia nuts. Toast nuts for 3-4 minutes, or until nuts are lightly browned, stirring often (see notes).
3. In a medium microwave safe mixing bowl, add white chocolate chips and coconut oil.
4. Microwave in 30 second intervals, stirring after each interval, until chips are melted and mixture is smooth (approximately 1-1½ minutes total).
5. Add macadamia nuts. Stir until macadamias are completely coated with chocolate.
6. Drop by spoonfuls onto wax paper lined pans. Sprinkle with coarse salt if desired.
7. Freeze for 30-45 minutes or until completely set.
8. Serve immediately or store, covered, in the refrigerator until ready to serve.
Notes
Toasting the macadamia nuts is an extra step which gives them an extra special nutty flavor. You can skip this step if you'd like and your clusters will still be delicious!
