The creamy base for our dessert is yogurt. You’ll want to carefully check your nutrition labels when buying yogurt to ensure it is low carb with no added sugar. Plain yogurt will usually be your best option. I used the brand Two Good for my yogurt. With this brand, you can use either plain or vanilla as they are both low in carbs. I used allulose as my sweetener. Allulose contains zero calories and zero net carbs. It’s less sweet than regular sugar, so we use about one-third more allulose than we would regular sugar. I usually use Swerve sweetener for my dishes, but for this dessert I found allulose crystallized less and was therefore less icy than when using Swerve. Both were delicious though! If you use Swerve, I recommend using 1/3 cup of their powdered sugar. Some vanilla and a pinch of salt round out our bark perfectly!

You absolutely can make this bark your own by adding your favorite keto toppings. I used chopped blackberries and raspberries, but you can substitute with some chopped strawberries if you’d like. Blackberries, raspberries, and strawberries have similar net carb counts with ½ cup coming in at between 3-4 net carbs. You can use blueberries, just know they are higher in carbs, with ½ cup containing about 9 net grams of carbs. If you’d like, you can top your bark with some chopped nuts. Some great options are almonds, macadamias, pecans, or walnuts. You can chop up some keto chocolate or top your bark with some keto chocolate chips. Another fun option is to top your bark with some unsweetened coconut. You can use either flakes or shredded, depending on the texture you’d prefer.

This sweet and delightful treat is fun and easy to make, but I do have a few tips so yours will come out perfectly! You’ll want to line the bottom of a baking pan or baking sheet with sides with parchment paper. Then, when you mix your ingredients, stir well to incorporate the sugar evenly into the yogurt. Your mixture will be thick. When you pour your mixture onto the parchment paper, I recommend you pour it into the middle of the baking sheet, then use a spatula to spread it out. You’ll want it to be about ¼-½ inch thick. Don’t worry if some parts are thicker than others. Just have fun making this treat. When you add your fruit or other toppings, you’ll want to press them lightly into the top of the yogurt. Then freeze your bark for 2-3 hours or until set before cutting and serving.

Keto Yogurt Bark with Berries

Ingredients
- 2½ cups keto yogurt, plain or vanilla
- ½ cup allulose*
- 1 teaspoon vanilla
- Pinch of salt
- ½ cup blackberries, cut into pieces
- ½ cup raspberries, cut into pieces
Instructions
1. Line a 15x10 inch pan (or baking sheet with sides) with parchment paper. Set aside.
2 In a medium mixing bowl, add yogurt, allulose, vanilla, and salt. Stir to combine ingredients.
3. Pour yogurt mixture onto parchment paper lined pan. Spread out to ¼-½ inch thick layer.
4. Top yogurt mixture with chopped berries, and press down lightly into yogurt mixture.
5. Freeze for 2-3 hours, or until set. Cut into pieces.
6. Store, in a covered container, in freezer.
Notes
*I find, for this recipe, allulose freezes the best, without as much crystallization as other keto sugars. You can substitute 1/3 cup Swerve powdered sugar in place of the allulose, just know the texture will be more icy.
