When my son tasted this soup, he said he’d never know it was made with turnips and not with potatoes. Turnips are a versatile root vegetable and are actually part of the mustard family. You have a great variety of ways to cook turnips. They can be boiled, grilled, mashed, roasted, or steamed. They make a great side dish all on their own, but can also be added to soups, stews, and casseroles. Taste wise, turnips have a pleasant earthy flavor and can be slightly bitter. Once cooked, they lose most of this bitterness and take on a slightly nutty and sweet taste. We boil our turnips in a chicken broth and water to add extra flavor!

You can use regular or thick cut bacon to make this soup. I used mild Italian sausage, but you could use hot Italian sausage to make your soup. The addition of onions and garlic gives this soup amazing flavor. We also add fresh spinach to this soup. I remove the stems from the spinach, then just roughly tear the leaves before adding them to the soup. Alternately, you can roughly chop your spinach with a knife. We then add heavy whipping cream which makes this soup incredibly rich and delicious. I recommend you give your soup a try and add salt and pepper to taste. I added 1 teaspoon of salt to my soup, but this could vary depending on how salty your sausage is.

I love this soup as written, but you have some wonderful substitution options for making your soup. I love playing around with ingredients to make dishes my own and encourage you to do the same to suit your and your family’s taste preferences. As stated above, you can use hot Italian sausage in place of the mild if you’d like to add a little heat to your dish. You can also add some red pepper flakes to this soup. If you’d like a heavier garlic flavor, you can add even more garlic to your soup. I’m a big fan of spinach and like to use fresh spinach whenever possible, so that’s what I used to make my soup. If you’d prefer, you could substitute chopped kale in place of the spinach to make your soup. If you’d like, you could also add some fresh grated Parmesan cheese to your soup!

Keto Zuppa Toscana Soup
This keto Zuppa Toscana soup is amazingly filling and flavorful. The substitution of turnips is the perfect choice to keep this dish low carb yet delicious!
Ingredients
- 1½ pounds turnips, peeled and cut into bite sized pieces
- 6 cups chicken broth
- 2 cups water
- 6 slices raw bacon, diced
- 1 pound mild Italian sausage
- 1 small onion, diced
- 2 garlic cloves, minced
- 4 cups roughly chopped/torn spinach
- 1½ cups heavy whipping cream
- Salt and pepper to taste
Instructions
1. To a large stockpot, add turnips, chicken broth, and water. Bring to a boil over high heat. Boil 30-40 minutes, until fork tender. Don't drain any of the liquid from the turnips.
2. While turnips are cooking, saute bacon in a large skillet over medium high heat to desired crispness level.
3. Drain grease and remove bacon to a paper towel lined plate.
4. Add sausage and onions to skillet and saute until sausage is cooked through. Add garlic during last minute of cooking. Drain grease.
5. To fork tender turnips, add bacon, sausage, and remaining ingredients to stockpot. Stir to combine.
6. Bring to a boil over high heat. Reduce heat to medium high and simmer 5-10 minutes, until heated through.
7. Add salt and pepper to taste.
