You’ll elevate your pulled pork to the next level when you make these fun and delicious leftover pulled pork keto sloppy joes!
These leftover pulled pork keto sloppy joes are an awesome way to use up your extra pulled pork. My family loves pulled pork, so I’ll often buy a huge pork shoulder and make a big batch. Well, there happened to be a buy one get one free deal so I made two batches of pulled pork. These sloppy joes were one of the fun things we made with some of the leftovers. I hope you’ll enjoy them as much as we do!
Let’s talk about our pulled pork!
You can either use homemade or store bought pulled pork to make these sloppy joes. It’s incredibly easy to make your own pulled pork, and it’s amazingly juicy and delicious. I have a go-to keto crockpot pulled pork recipe that’s always a family favorite at my house. It’s an awesome dish that takes just 10 minutes of prep time and the crockpot does the rest! My preference for pulled pork is to use a bone-in pork shoulder roast, but a pork butt roast is a good choice too. If you choose to use store bought pulled pork, you’ll want to carefully check the ingredient list and the nutritional labels. Some pulled pork is just pork and seasonings, and the carb count is very low. Some, however, come prepared with sauce and these are usually loaded with sugar and have an extremely high carb count.
How do I make the sauce for these leftover pulled pork keto sloppy joes?
The sauce for these sloppy joes is both low carb and amazingly delicious. We start with sauteing some onions in butter and olive oil, then adding some fresh garlic. You can certainly use all butter or all olive oil if you’d prefer. I didn’t add any diced bell peppers for these sloppy joes, but you can add some if you’d like. If so, you’ll want to saute them with the onions. We then add water, keto ketchup, tomato paste, keto brown sugar, mustard, tamari, and white wine vinegar. For my ketchup, I used the Primal Kitchen brand. I used their regular ketchup, but they also make an awesome spicy ketchup that could be used as well. I’m a huge fan of Dijon mustard, but I love the flavor that yellow mustard brings to sloppy joes so it’s what I used for this dish.
How can I serve these leftover pulled pork keto sloppy joes?
You have some awesome low carb options for serving these sloppy joes! This sloppy joe mixture can simply be served in a bowl as is. You can also top the mixture with chopped green onions, chopped tomatoes, diced avocados, shredded cheese, or sour cream, just to name a few. Another great option is to serve these sloppy joes on some lettuce, in a lettuce wrap, or in a green salad. You can then top them with your favorite toppings and even a drizzle of your favorite dressing. If you’d like to make your sloppy joes into a more traditional sandwich, you can serve them on keto biscuits, bread, chaffles, or English muffins. Another fun option is to serve this mixture, perhaps topped with melted cheese, as an appetizer dip. Some low carb dipper options include cheese whisps, keto crackers, pork rinds, and raw vegetables.
