You’ll definitely create a winner winner chicken dinner when you make these lemon herb baked chicken leg quarters! They are extremely easy to prepare and come out juicy with a nice crispy skin. These are an awesome everyday dinner option but are also elegant enough to serve for special occasion dinners! Enjoy!
Let’s talk about the ingredients for this dish!
Chicken leg quarters are completely dark meat and consist of the chicken drumstick, thigh, and part of the back. They roast incredibly well, and you end up with moist chicken meat and a crispy skin all with the bonus of not having to brown the chicken first! You can substitute with bone-in skin on chicken thighs if you’d rather. You’ll just have to adjust your roasting time accordingly. To make this dish, we combine melted butter with fresh lemon juice, olive oil, and tamari. I love using fresh lemon juice whenever possible, but you can substitute with bottled if you’d like. To this mixture, we add an awesome herb and spice mix which consists of dried basil and oregano, garlic and onion powder, salt, and pepper. It’s a simple mixture but it’s incredibly delicious.
How do I make these lemon herb baked chicken leg quarters?
This is an incredibly easy dish to make, but there are a few things you can do to ensure your chicken turns out perfectly! First, I recommend spraying your baking pan with avocado oil spray so your chicken won’t stick to the pan. Next, you’ll want to place the chicken skin side up so it will get an awesome browned and crispy skin. I like to brush the seasoning mixture evenly onto my chicken, so all the pieces will be coated evenly. Next, although it’s safe to serve this chicken at an internal temperature of 165 degrees, I like to cook mine to 175-185 degrees which creates an amazingly tender and moist chicken! I also baste my chicken once or twice while it bakes to add even more flavor and juiciness to the chicken. Last, you can serve this chicken with some of the delicious pan juices if you’d like.
How can I serve these lemon herb baked chicken leg quarters?
You have some great low carb options for serving this chicken. This dish is easy enough to serve for everyday meals, but it’s also elegant enough to serve for holidays or special occasion meals. You can always start your meal with a green salad or a keto soup. A Caesar salad is always an awesome choice! You can always serve this chicken with some keto biscuits, cornbread, or English muffins. Any low carb cooked vegetable would pair nicely with this chicken. Some great options include asparagus, broccoli, Brussels sprouts, cauliflower, green beans, radishes, or spinach. You can also serve this chicken with mashed cauliflower, mashed kohlrabi, or mashed turnips. Sauteed kohlrabi or turnips are also wonderful options. If you’d like, you could also serve this chicken with a side of keto chicken gravy.
