I found that 2 sliced large lemons was the perfect amount to cover the bottom of a 13×9 inch baking dish; but you could use 3 smaller lemons. For seasoning, we drizzle some olive oil over our chicken, then season evenly with salt and pepper. I added just a little pepper, but if you’d like, you can add even more. Fresh chopped rosemary brings incredible flavor to this chicken. It also results in a beautiful dish that works great for everyday meals or could be served for parties or special occasion meals as well!

Last, you’ll want to bake your chicken until it reaches 165 degrees.

Ingredients
- Avocado oil spray
- 2 large lemons
- 6 bone-in skin on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon fresh chopped rosemary
Instructions
1. Pre-heat oven to 375 degrees. Spray a 13x9 inch baking dish with avocado oil. Set aside.
2. Slice lemons and places slices evenly over bottom of prepared baking dish.
3. Place chicken, skin side up, evenly onto lemon slices.
4. Drizzle olive oil evenly over chicken thighs. Sprinkle salt and pepper evenly over chicken thighs.
5. Top chicken thighs evenly with chopped rosemary.
6. Bake for 35-45 minutes, or until internal temperature reaches 165 degrees.
