I love radishes. For a long time, I ate them raw, often alongside a salad. I added a touch of salt to them and thought that was the best way to eat radishes. I didn’t know what I was missing until the first time I roasted radishes. They tasted like little potatoes, only better! It opened up for me a whole new set of dishes that could be made keto and low carb using radishes as a substitute for potatoes. This recipe for loaded roasted radishes if a fun option I hope will make radish lovers out of your whole family!

Radishes are classified as a root vegetable. But they are extremely low carb. 10 radishes come in at only about 1 net gram of carbs. They contain calcium, folate, magnesium, potassium, vitamin B6, Vitamin C, and fiber. Radishes are also low in calories. One cup contains about 20 calories! When you eat radishes raw, they range from mild to having quite a bite to them. When you roast them, much of this strong bite goes away. I have tried boiling radishes, but find they hold more moisture with this method. So, I prefer to roast them.
Can I change up this recipe?
You can absolutely change up this recipe for you and your family’s taste preferences. There are a wide variety of cheeses you could use in this dish. I love the combination of cheddar and mozzarella for both the taste and beauty they bring to this dish. You could use swiss, Monterey jack, pepper jack, smoked gouda, or even fresh mozzarella cheese for this recipe. If you’d prefer, you could use prosciutto in place of the bacon. Also, you could substitute fresh chives for the onion if you’d prefer.
For toppings, I suggest sour cream. But you can let your imagination soar with this. You could top these loaded roasted radishes with chopped olives, tomatoes, and even jalapenos if you’d like to add a kick to this dish! Oh, and just in case you’re wondering, I don’t think anyone knows exactly how much a dollop of sour cream is! It signifies a small amount. But, in this case, I think you should put on as much sour cream as you’d like!

Loaded Roasted Radishes
Radishes, bacon, and cheese come together perfectly with these loaded roasted radishes! This is an easy and fun recipe I think you and your family will love!
Ingredients
- 1½ pounds radishes, cut into bite size pieces
- 2 tablespoons olive oil
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- ⅔ cups shredded cheddar cheese, divided
- ⅓ cup shredded mozzarella cheese
- 4 ounces bacon, fried and crumbled
- 1 green onion stalk, chopped
- Sprinkle of paprika
- Optional topping: sour cream
Instructions
1. Pre-heat oven to 400 degrees.
2. Place radishes onto a baking sheet large enough for radishes to not overlap.
3. Drizzle olive oil over radishes. Sprinkle garlic powder, onion powder, salt, and pepper over radishes. Stir to coat radishes evenly in the olive oil and with the seasonings.
4. Roast for 35-40 minutes, or until radishes are fork tender. Stir 3-4 times while roasting.
5. Remove baking sheet from oven. Turn oven to broil.
6. Sprinkle radishes with ⅓ cup shredded cheddar and ⅓ cup shredded mozzarella cheese.
7. Sprinkle bacon evenly over the cheese. Then sprinkle the green onions over the bacon.
8. Top with remaining ⅓ cup shredded cheddar cheese. Sprinkle with paprika.
9. Broil for 2-3 minutes, or until cheese is melted.
10. Serve immediately. Top each serving with a dollop of sour cream if desired.
