Ingredients
- 8 ounces raw bacon, diced
- 1½ pounds ground beef
- 3 tablespoons diced onion
- 3 tablespoons diced red peppers
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 ounces cream cheese, softened
- 3 tablespoons keto ketchup
- 1 tablespoon Dijon mustard
- 1 tablespoon tamari
- 3 tablespoons chopped dill pickles
- 2 cups shredded colby jack cheese, divided
- 6 eggs
- ¾ cup heavy whipping cream
- ¼ cup sour cream
- ⅛ teaspoon hot sauce
Instructions
1. Pre-heat oven to 350 degrees.
2. In a large skillet, over medium high heat, cook bacon until desired crispness, stirring occasionally. Drain bacon grease. Remove bacon and set aside.
3. In same skillet, add ground beef, diced onion, diced peppers, salt, and pepper. Cook until beef is no longer pink, breaking it up into small pieces as it cooks. Drain fat from ground beef.

7. In a medium mixing bowl, add eggs, heavy cream, sour cream, and hot sauce. Whisk until mixture is smooth.
8. Pour egg mixture evenly over casserole. Top with remaining ½ cup shredded cheese.
9. Bake for 35-40 minutes, or until knife inserted comes out clean.
10. Let set for 5-10 minutes before serving.
