This low carb beef and bacon chili is an amazingly deliciously and satisfying chili. This is comfort food at its finest!
I love making soups and stews for my family, and this low carb beef and bacon chili was a big hit! It makes a big batch and also reheats well, so it works great for leftovers. You can also easily adjust the ingredients and spices to make this chili as mild or as hot as you’d like!
Let’s talk about chili!
Chili is a type of stew, but there are any number of ingredients, combination of ingredients, and herbs and spices that can go into the stew. Most chili contains meat, but it can be made vegetarian as well. Any ground meat can be used for chili. It can also be made with bacon, chicken, sausage, seafood, steak, and venison just to name a few. Some think beans have no place in chili and others think it’s not chili without beans. The same goes with diced tomatoes! There are any number of vegetables you can add to chili as well. Then there’s the sauce! Many chili recipes call for a red sauce, but some are made with a green or white sauce. There are also any number of toppings you can add to your chili to make it your own!
How can I control the heat level in this low carb beef and bacon chili?
You can make this chili mild, medium, or hot. As written, this is a fairly mild chili. If you’d like it even milder, you can omit the jalapeno pepper and the cayenne from yours. Topping your chili with some sour cream also cools it off a bit. A good thing to know is that the majority of heat from chili peppers is contained in the seeds and membranes. So, if you’d like a hotter chili, you can add some of the seeds, membranes, or both. You could also use a hotter pepper type such as a serrano or habanero for your chili. You could also add more cayenne or even red pepper flakes to your chili for some added heat. Another fun option to up the heat level is to add some of your favorite hot sauce to your chili.
How can I serve this low carb beef and bacon chili?
This is a filling dish that can be served as it to make a complete meal. You can top your chili with some chopped onions, shredded cheddar cheese, or sour cream. Some other great toppings include chopped cilantro or chives, diced avocado or jalapenos, sliced olives, or shredded lettuce. If you’d like, you can serve this chili with a green salad or with coleslaw. A side of keto biscuits, cornbread, or English muffins would be a great addition as well. For parties and get togethers, I like to serve a variety of low carb appetizers, then serve this chili with lots of topping choices as the main course. And, of course, the meal has to end with some decadent keto desserts!

Helpful Hints:
*I like to chop my bacon and then cook it. If you’d prefer you can cook your bacon slices and then crumble them.
*If you’d like larger tomato pieces, you can use regular diced tomatoes in place of the petite diced.
