Let’s talk about the sausage and vegetables that go into our low carb cabbage and sausage skillet!
You have a variety of options for the kind of sausage you use in this dish. You will want to use a cooked sausage, either a sausage ring or sausage links. The carb count on sausage can vary depending on how the sausage is prepared and what ingredients are added to it, so you’ll want to check your nutrition labels when buying. I used all-beef uncured Polish sausage links for my dish, which contained no added sugar. You can use a low carb kielbasa or any cooked beef, chicken, or pork sausage, or a sausage with a combination of beef and pork for your dish. You could even use elk or venison sausage. I love the color combination of red and green peppers, but you can use any color or color combination you’d like. I used a yellow onion; but a white onion would be a good choice too.
