Low Carb Chard with Bacon

Ingredients
- 6 ounces bacon, chopped
- 3 tablespoons diced red onion
- 2 garlic cloves, minced
- 1 cup chicken broth
- 1 tablespoon balsamic vinegar
- 1 tablespoon spicy brown mustard
- 2 bunches chard leaves, chopped
- Salt and pepper to taste
Instructions
1. In a large skillet, over medium high heat, fry bacon until desired doneness. Remove bacon to a plate. Do not drain bacon grease.
2. Decrease heat to medium. Add onion. Saute until softened, about 4 minutes. Add garlic during last minute of sauteing.
3. Add bacon back to pan. Add broth, vinegar, and mustard. Stir to combine. Add chard in batches, allowing chard to wilt down before adding next batch.
4. Once all chard is added, increase heat to medium high. Cover and cook for 5 minutes.
5. Remove cover and cook for 5 additional minutes or until liquid has mostly evaporated
