Let’s talk about the marinade for our chicken!
The marinade we use for our chicken is simple, yet delicious! We start with a combination of olive oil, lime juice, and tamari. If possible, I recommend using fresh lime juice. But, in a pinch, bottled juice can be substituted. Most all tamari sauces are gluten free, but I always check my nutrition labels when buying. We then add chili powder, cumin, keto sugar, and pepper. Although I normally add salt to my marinades, because our fajitas contain bacon, I leave it out this time. For the best results, I recommend marinating the chicken for at least 30-60 minutes. If you’d like, you can marinate overnight as well. I like to marinate my chicken in a bowl and toss it few times to make sure the chicken is completely coated in the marinade.
What other ingredients go into these low carb chicken bacon fajitas?
For our chicken, we’re using boneless, skinless chicken breasts. When cutting, you’ll want to cut your chicken into uniform sized strips to ensure they cook evenly. If using smaller and thinner chicken breasts, you can just cut them into strips. If you’re using large chicken breasts, you’ll want to slice them in half horizontally before cutting into strips. I used regular bacon for my fajitas, but you can use thick cut bacon if you’d prefer. We don’t need to add any oil since we’re using our bacon grease to saute our chicken in. For vegetables, I used a combination of green peppers, red peppers, and onions. You can use any color or color combination of bell peppers you’d like. Orange and yellow peppers make beautiful fajitas too! For onions, I used yellow. But you can use red onions or a combination of red and yellow if you’d prefer.
What can I serve with these low carb chicken bacon fajitas?
These fajitas are delicious and can be served just as they are! If you’d like, you can also serve them with some delicious toppings. Some of our favorites include diced or sliced avocadoes, chopped or diced tomatoes, shredded cheese, and sour cream. We usually use cheddar cheese, but you can use other kinds if you’d prefer. Some good choices include colby, colby jack, mozzarella, Monterey jack, or even pepper jack if you’d like to add a little kick to your fajitas! If you’d like, you could also add some sliced black olives or sliced jalapenos to your fajitas. If you have a favorite keto tortilla, you can always serve them with these fajitas. I like to chop up some lettuce and make a big fajita salad! For a quick and easy dressing, you can combine some salsa and sour cream! It’s delicious!

Low Carb Chicken Bacon Fajitas
Take your fajitas to the next level with these low carb chicken bacon fajitas! These fajitas are fun and amazingly delicious!
Ingredients
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 tablespoon tamari
- 1 tablespoon chili powder
- 1 teaspoon cumin
- ½ teaspoon granulated sugar substitute (Swerve)
- ⅛ teaspoon pepper
- 1½ pounds chicken breasts, cut into strips
- 8 slices bacon
- 1 medium green pepper, cut into strips
- 1 medium red pepper, cut into strips
- 1 medium onion, sliced
- Optional toppings: avocado slices, chopped tomatoes, shredded cheese, sour cream
Instructions
1. In a small mixing bowl, add olive oil, lime juice, tamari, chili powder, cumin, sugar, and pepper. Stir or whisk to combine ingredients.
2. Add chicken to a medium mixing bowl. Pour marinade mixture over chicken and stir to completely coat chicken in marinade. Cover with plastic wrap and refrigerate for 30-60 minutes.
3. While chicken is marinating, in a large skillet, over medium high heat, fry bacon until crisp. Use a slotted spoon to remove bacon. Crumble bacon and set aside. Do not drain bacon grease from skillet.
4. Add chicken to skillet. Saute chicken in bacon grease, turning frequently, until cooked through. Saute in batches, if necessary. Remove from pan. Cover with aluminum foil and set aside.
5. In same skillet, saute peppers and onion for 5 minutes, or until softened.
6. Serve fajitas immediately. Top with avocado slices, chopped tomatoes, shredded cheddar cheese, and sour cream if desired.
7. Store leftovers, in a covered container, in the refrigerator.
