I like to use cooked chicken breasts for my dish, but you can use white meat, dark meat, or a combination of both for yours. You can also use a rotisserie chicken for a quick and easy option. You can substitute your favorite cooked vegetable or combination of vegetables for your casserole. Some good options include asparagus, bell peppers, cauliflower, green beans, or mushrooms. Just make sure you drain your vegetables, so you don’t end up with a watery casserole. I love using mozzarella cheese in my casserole and then topping it with cheddar to give it a beautifully browned top. You can use any good melting cheese or combination of cheeses for your dish. You can use your favorite ranch dressing, or you can customize even more and make homemade ranch dressing!
How do I make homemade keto ranch dressing to use in this low carb chicken bacon ranch casserole?
I have a go-to homemade keto ranch dressing; but it can be customized for your personal taste preferences. For my dressing, in a small bowl, I stir together 1 tablespoon of parsley, 1 teaspoon of garlic and onion powder, ½ teaspoon of chives and dill, and ¼ teaspoon of salt and pepper. Then to a medium mixing bowl, I combine ½ cup of heavy whipping cream with 1½ teaspoons of white vinegar and allow this mixture to set for about 5 minutes. This is my keto version of homemade buttermilk! After 5 minutes, I add ½ cup keto mayonnaise and ½ cup sour cream and stir to combine. The last step is to add the seasoning mix and stir well. If you’d like, you could add different of herbs and spices. Some fun options would include chili powder, cumin, red pepper flakes, paprika, or smoked paprika.

Low Carb Chicken Bacon Ranch Casserole
This low carb chicken bacon ranch casserole is the ultimate comfort food! It’s an amazingly creamy, cheesy, and satisfying dish! Enjoy!
Ingredients
- Avocado oil spray
- 8 ounces broccoli, chopped
- 8 slices raw bacon, diced
- 2 tablespoons diced onion
- 2 garlic cloves, minced
- 8 ounces cream cheese, softened
- 1 cup ranch dressing
- 4 cups cooked and chopped chicken
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
Instructions
1. Pre-heat oven to 350 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. Steam or boil broccoli until fork tender. Drain well.
3. In a medium skillet, over medium high heat, fry bacon until crisp. Remove bacon to a plate. Drain all but 1 tablespoon of bacon grease from skillet.
4. In reserved bacon grease, over medium heat, saute onion 4-5 minutes, or until it starts to soften. Add garlic during last minute of sauteing. Set aside.
5. In a large mixing bowl, add cream cheese and ranch dressing. Beat until combined.
6. Add broccoli, bacon, onions, and garlic. Stir to combine.
7. Add chicken and mozzarella cheese. Stir to combine. Place into prepared baking dish.
8. Top evenly with shredded cheddar cheese.
9. Bake for 25-30 minutes, or until heated through.
Notes
You can use your favorite ranch dressing or make homemade keto ranch dressing for your casserole.
